There really is no way to stop time... When hair begins to turn gray (from loss of pigmentation).. you can't halt the process.

The only option would be coloring, or perhaps trying one of the products that "colors" hair gradually. If it were me, I'd see an excellent professional colorist for a consultation.
But that's me....
We all know that plenty of people learn to embrace their "gray"... it's a beautiful thing!

To check graying of hair, mix lemon juice in olive oil, beat till frothy and apply on scalp and wash off after an hour. Premature graying of hair can be postponed by using a strong decotion of black tea and a tablespoon of salt, strain and apply to the roots for 45 minutes and wash with water. Don't shampoo. your hair will not stop turning grey, you have an allotted amout of pigment in your follicles after it runs out then you begin to turn grey, sorry, the only thing you can do is color it or just live with it.
