I have red beans and sour cream. What else can I add to that to season it up into an actual dish? Go! (be warned i'm a hapless bachelor.)

KIDNEY BEANS IN SOUR CREAM

2 (15 oz.) cans red kidney beans
3 lg. onions
2 tsp. cooking oil
1 c. sour cream or plain yogurt

Drain beans and put in a casserole baking dish. Saute the onions, sliced thick, in the cooking oil. Mix the sour cream, or yogurt, with the onions. Add salt and pepper to taste and stir into the beans. Bake 30 minutes at 350 degrees.


CONFETTI BEAN DIP

1 round loaf crusty bread

Sour Cream Mixture:

12 oz sour cream
1 tablespoon cream
1 - 2 jalapeno or poblano peppers, minced
2 tablespoons cilantro, chopped
1/4 cup ea. red, yellow, green peppers, chopped finely

Bean Mixture:

3 tablespoons olive oil
1 large onion, chopped
1/4 tsp ground cumin seed
2 16 oz cans dark kidney beans
3 cloves garlic, finely minced
salt and pepper to taste

First, create a bread bowl.

Cut a circle into the crust of the bread near the top. Scoop out the bread from the center leaving a shell about 1/2-3/4 inch thick. Combine sour cream and peppers, cilantro and set aside.

To prepare the bean dip, heat the olive oil in a skillet. Saute onions until lightly browned. Add cumin. Stir and set aside.

Chunky Chili

1 pound lean ground beef
1 bay leaf
1 small onion, chopped
1 t. Worcestershire sauce
1 t. salt
2 cans (8 oz. ea.) tomato sauce
2 t. chili powder
2 cans (15 oz. ea.) kidney beans

Brown the ground beef in a skillet. Drain the kidney beans. In the crock pot, combine the beef with remaining ingredients. Cover and cook on high for 2 to 3 hours. Be sure to remove bay leaf before serving. This is a very thick chili. Add 1 cup of water to make a thinner chili. Serve with rice or corn chips and cheese or a big dollop of sour cream.

Mince garlic in a food processor. Process beans, onions and seasonings to taste. Turn out into bread bowl and stir in the sour cream mixture.

Serve with fresh celery sticks, sliced carrot sticks, tostitos and a bowl of fresh salsa.

Garnish with cilantro, green onions, and a dollop of sour cream.

Variation: For added flavor, coat the peppers and garlic in olive oil and roast at 400F degrees in the oven until slightly browned before using in above mixture

You can go a couple of ways: Chili Cheese Bean Dip.
Coarsley mash beans with a fork in large bowl.
Add cup of salsa, diced Velveeta &/or cut-up cream cheese.
Diced green pepper, sliced onion, chili powder, garlic, etc.
Cut top off crusty sour-dough bread loaf & hollow out a bowl.
Spoon mixture into loaf, replace top, wrap in foil.
Bake in 300F oven for 2 hours until cheese is melted.
Remove foil. Add dollop of sour cream, dip bread pieces.

Red Beans and Chicken Chunks

1 16-ounce can of red beans, drained
2 6-3/4-ounce cans of chunk chicken, drained (or an equivalent amount of leftover chicken)
1 4-ounce can of chopped green chilies, drained
1/2 cup of hot taco sauce (or salsa)
1 cup of cheddar cheese, shredded
3 cups of corn tortilla chips, coarsely broken
1 large tomato, cut into bite-sized chunks
1/2 small head of iceberg lettuce, sliced (about 3 cups)
1 small avocado
1/3 cup of sour cream

In a 12-inch skillet, heat the chicken, red beans, green chilies, and taco sauce over medium heat until they are heated through. Sprinkle the shredded cheese over the mixture.


Push the chicken mixture to the center of the skillet and take the skillet off the heat. Arrange the tortilla chips around the chicken mixture, then add the sliced lettuce and tomato chunks around the chips. Peel, pit, and slice the avocado. Arrange the avocado slices

Mexican Pizza
Nachos

BEANOVSKI
4 ounces bacon, diced
1/8 cup clarified butter
1 medium onion, diced
1 1/2 tablespoons flour
1/2 teaspoon chili powder
1 can red kidney beans
1 1/2 cups cold water
1 cup dry white wine
1 cup sour cream
Freshly ground salt
Freshly ground pepper

Fry bacon in pan and add clarified butter. Stir in onion and cook until soft. Add flour and chili powder and cook another 3 minutes. Add beans and 1 cup water to thicken mixture. Cook over low heat for 1 hour. Gradually add white wine and remaining 1/2 cup water. Finally stir in sour cream and simmer 10 minutes. Season with salt and pepper and serve at once.

Mash the beans and make a sandwich out of them. Very good.

Mash the beams and put the sour cream on top of them. A bean salad.

For Red beans, you can make soups and desserts out of them. If it is for soup, add pork or chicken to go with it.
If it is for Dessert, cook with water until soft then add sugar. Before serving, add milk. Or add to your favorite ice cream.

For sour cream, I make spread with it or top in with potatoes.

you can make red beans with sour cream sauce, or make the red beans and then some rice and them make tacos and the sour cream can be a topping.

ADD CILANTRO, CHOPPED VIDALIA ONION, SHREDDED SHARP CHEDDAR CHEESE,REFRIED BEANS,SLICED LETTUCE AND DICED TOMATOES..ADD A DASH OF SEA SALT AND PEPPER.ONE SQUEEZE OF FRESH LIME JUICE WILL MAKE THIS DISH SO SO AWSOME!
