instead of putting loads of water, put a wee bit and a bit of cream. let it cook for a while and the consistnecy will thicken the longer you cook it.

The problem may not be that you are not draining your pasta, but that your sauce is too watery. When you make the sauce, add in half of a small can of tomato paste and stir it into your sauce well, bring it to a boil, and then simmer for a bit until it thickens. When you make your pasta, be sure to put the pasta into a sieve and let it drip until all te water is off. Then put your pasta into a large bowl or platter and add the sauce to it, and then sprinkle with cheese.

Your sauce ingredients should simmer at least an hour before adding your cooked meat and then simmer down for at least 2 more hours. Your sauce will be a medium consistency, not watery. The pasta has nothing to do with how you cook your sauce. Patience does.

You have got to let the pasta drain well before mixing the sauce. Do not rinse!

It's a common mistake. You may have cooked the sauce all day long, but have not taken the time to let the pasta drain thoroughly. Please, allow an extra 30-60 seconds for all the non-absorbed water to drain off.

This may help: After draining the pasta put the pot on low. add a Tbsp. of butter melt and return the pasta to the pot, stir about one minute. Put on your warm platter add the sauce. good luck!

what kind of tomato product are you using...? sautee ground beef or pork with onion and bell pepper. when beef is browned, drain well. return to pan and add crushed tomatoes, seasonings and some good olive oil. simmer on low for and hour or so. should be a nice thick sauce that doesn't turn watery. tomato paste can also help if your sauce is to thin

i agree with all the answers, but have a question. are you simmering your sauce with the lid on the pot? if so, that's adding condensation. lidless simmering is important too.
