My daughter casey and her brother Tyler are in pre school they are learning about different countries ( not geography or anything) and we have been asked to bring in an italian dish somthing kids will enjoy. if you have any recipes i'd appreciate them.

ITALIAN DOUGHNUTS

Vegetable oil, for frying
Olive oil, for frying
1 pound prepared pizza dough
3/4 cup sugar
1 1/2 teaspoons ground cinnamon

Pour equal parts of vegetable oil and olive oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 375 degrees F.

Roll out the dough on a lightly floured surface to 1/2-inch thickness. Using a floured 2-inch cookie cutter, cut out doughnut rounds. Using a floured 1-inch cookie cutter, cut out a hole in the center of each doughnut. Gather the dough scraps and re-roll to cut out more doughnuts.

Whisk the sugar and cinnamon in a medium bowl to blend. Set the cinnamon-sugar aside.

When the oil is hot, working in batches, fry the doughnuts until they puff but are still pale, about 45 seconds per side. Using a slotted spoon, transfer the doughnuts to paper towels to drain. Cool slightly. While the doughnuts are still warm, add to the bowl with cinnamon-sugar and generously coat each 2 times with the cinnamon-sugar. Serve warm.

Alternately, cool the fried doughnuts to room temperature. Stir 3 ounces milk chocolate and 1/4 cup whipping cream in a heavy small saucepan over medium-low heat until the chocolate melts. Set aside until the chocolate sauce comes to room temperature but does not set. Dip 1 side of each doughnut into the chocolate mixture. Sprinkle with finely chopped toasted almonds or crushed espresso beans and set aside until the chocolate is set.



ITALIAN WEDDING COOKIES

1 1/2 cups unsalted butter
3/4 cup confectioners sugar, plus 1/3 cup, for rolling
3/4 teaspoon salt
1 1/2 cups finely ground blanched almonds
5 1/2 teaspoons vanilla extract
3 cups sifted all-purpose flour

Preheat oven to 325 degrees F. Cream butter in a bowl. Gradually add confectioners sugar and salt. Beat until light and fluffy. Add almonds and vanilla. Blend in flour gradually and mix well. Shape into crescents using about 1 teaspoon for each cookie. Place on ungreased cookie sheets, and bake for 15 to 20 minutes. Do not brown. Cool slightly, then roll in the extra confectioners' sugar.



PIZZETTAS w/ OLIVE TAPENADE AND PECORINO CHEESE

1 jar olive tapenade (10 to 12 ounces)
12 ounces store-bought pizza dough or 2 dough rounds
Olive oil, for drizzling
2 tablespoons fresh thyme leaves
Salt and pepper
1/4 pound Pecorino cheese, thinly sliced

Preheat oven to 375 degrees F.

Stir the garlic into the tapenade. Cut the dough rounds into 4 pieces (1 1/2-ounce pieces) and roll those out to 1/8-inch (if possible, roll out to desired thickness by using a pasta machine). Cover the top of the rolled out dough with olive paste and garlic mixture. Drizzle each pizzetta with olive oil. Sprinkle the thyme and salt and pepper on top. Lay the pecorino on top of pizzetta.

Place the pizzettas onto a lightly floured baking sheet. Bake them for 15 minutes or until light brown (a cracker like thinness and texture). Let cool for about 10 minutes, and serve.

* 1 (16 ounce) package rotini pasta
* 1 cup Italian-style salad dressing
* 1 cup creamy Caesar salad dressing
* 1 cup grated Parmesan cheese
* 1 red bell pepper, diced
* 1 green bell pepper, chopped
* 1 red onion, diced

DIRECTIONS

1. In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
2. In a large bowl, combine the pasta, Italian salad dressing, Caesar dressing, red bell pepper, green bell pepper and red onion. Mix well and serve chilled or at room temperature.


Italian Breaded Pork Chops

INGREDIENTS

* 3 eggs, lightly beaten
* 3 tablespoons milk
* 1 1/2 cups Italian seasoned bread crumbs
* 1/2 cup grated Parmesan cheese
* 2 tablespoons dried parsley
* 2 tablespoons olive oil
* 4 cloves garlic, peeled and chopped
* 4 pork chops



DIRECTIONS

1. Preheat oven to 325 degrees F (165 degrees C).
2. In a small bowl, beat together the eggs and milk. In a separate small bowl, mix the bread crumbs, Parmesan cheese, and parsley.
3. Heat the olive oil in a large, oven-proof skillet over medium heat. Stir in the garlic, and cook until lightly browned. Remove garlic, reserving for other uses.
4. Dip each pork chop into the egg mixture, then into the bread crumb mixture, coating evenly. Place coated pork chops in the skillet, and brown abut 5 minutes on each side.
5. Place the skillet and pork chops in the preheated oven, and cook 25 minutes, or to an internal temperature of 160 degrees F (70 degrees C).

Something my daughter has loved since she was 2 or 3. Spaghetti Salad. With children that age you need not put the vegetables in it. Just take and cook spaghetti strings the way you normally do. Drain and rinse until cool. Toss with Good Seasons Sun Dried Tomatoe Salad dressing. The kids will love it and what can be more Italian?

You probably want something that doesn't need to be cut up or reheated - How about bruschetta? Italian bread cut on the bias, toasted on a grill (I broil it for a minute after the broilr has heated the rack to get the stripes) then topped with tomato slices and cheese. Let the cheese melt a bit. The tomatoes might be too messy so perhaps you could substitute a spoonful of tomato sauce.

Baked Chicken Lasagna Rolls
Ingredients
2 cups Park skim ricotta cheese
1 1/4 cup Mozzarella part-skim cheese, shredded
1/4 cup Parmesan cheese
1 Egg
1 teaspoon Garlic powder
1/4 cup Chopped fresh parsley
1/2 teaspoon Salt
1/2 teaspoon Black pepper
2 cups Shredded baked chicken breasts
8 Cooked lasagna noodles
1 1/2 cup Tomato sauce

Preparation
1. Preheat oven to 375 degrees

2. Mix first eight ingredients, reserving 1/4 cup of mozzarella for baking, set aside

3. Lay a large piece of plastic wrap on counter top. Lay noodles flat atop plastic wrap. top each noodle with a layer of ricotta mixture and 1/4 cup chicken

4. starting at one end, roll one noodle at a time

5. Fill the bottom of the baking dish with 12 cup of tomato sauce

6. Lay rolls seam-side down, cover iwth remaining tomato sauce, and sprinkle with 1/4 cup mozzarella cheese

7. Bake at 375 degrees for 20 minutes

SPEGHETTI PIE
1/2 pkg. (12 oz.) vermicelli
2 tbsp. butter
1/3 c. Parmesan
2 eggs, beaten
1 lb. ground meat
1/2 c. onion, chopped
1/4 c. bell pepper, chopped
1/2 c. Mozzarella
1 can (8 oz.) stewed tomato
1 (6 oz.) tomato paste
1 tsp. sugar
3/4 tsp. oregano
1/2 tsp. salt
1/2 tsp. garlic salt
1 can cream style cottage cheese
8-12 pepperoni slices

Cook vermicelli according to directions. Stir butter and Parmesan into hot vermicelli. Add eggs and stir well. Spoon into 10 inch pie plate. Use spoon to shape spaghetti. Cook until set, about 350 degrees for 10 minutes.
Brown beef with onion and bell pepper. Drain. Stir in tomatoes, tomato paste and seasonings. Spread cottage cheese evenly over pie shell. Top with meat sauce. Bake until bubbly. Sprinkle with Mozzarella and garnish with pepperoni. Bake until cheese melts.(DOUBLE THE RECIPE FOR THE THE AMOUNT OF PEOPLE)

ITALIAN ANISE COOKIES

6 eggs
1 c. sugar
1/2 tsp. salt
1 tbsp. anisette flavor or 1 capful anise oil
1 c. milk
1 c. oil
6 c. flour
6 tsp. baking powder

Mix eggs, sugar, milk, oil and flavoring together. Add dry ingredients. Shape as desired. Bake at 375 degrees for 10 to 12 minutes.

1 recipe basic pizza dough, recipe follows
3 tablespoons olive oil
4 cups thinly sliced yellow onions
Salt and freshly ground black pepper
4 cups thinly sliced green bell peppers
1 pound Italian sausage, crumbled
1/2-pound provolone, sliced
2 cups button mushrooms, sliced
2 cups your favorite tomato sauce
1/2-pound mozzarella, sliced

Divide the dough in half. Roll each half into a 12-inch circle, about 1/2-inch thick. Press the dough into 2 greased 12-inch deep-dish pizza pans. Cover with a clean dish towel and let rise 30 minutes.
Preheat the oven to 400 degrees F.

In a large saute pan, over medium heat, add 2 tablespoons of the olive oil. When the oil is hot, add the onions. Season with salt and pepper and saute for 2 minutes. Add the peppers, season with salt and pepper, and continue to saute for 3 minutes. Remove from the heat. Transfer to a bowl and set aside.

In the same pan, over medium heat, add the sausage and render for 4 to 6 minutes. Remove and drain on paper towels.

Lay 1/4-pound of the sliced provolone on the bottom of each pizza. Spoon 1/2 the onion and pepper mixture over each pizza. Sprinkle 1/2 of the sausage over the onion mixture on each pizza. Scatter 1 cup sliced mushrooms over sausage. Spread 1 cup of the tomato sauce over the top of each pizza. Layer 1/4-pound mozzarella slices over top of each pizza. Drizzle with remaining olive oil. Bake the pizzas for 25 to 30 minutes or until golden brown.

Remove the pizza from the oven and cut into individual servings.


Basic Pizza Dough:
1 package active dry yeast
2 teaspoons sugar
1 cup warm water (110 degrees F)
1/4 cup lard or vegetable shortening
3 to 4 cups all-purpose flour
2 teaspoons salt
Olive oil
In an electric mixing bowl, whisk the yeast, sugar, water and lard together to make a paste. Add the flour and salt and mix, using a dough hook, until the dough comes away from the sides and crawls up the dough hook. Remove the dough from the bowl. Grease the bowl with olive oil and place the dough back in the bowl. Cover the bowl with plastic wrap and let the dough rise until doubled in size, about 1 hour. Turn the dough out onto a floured surface and divide dough in half. Roll the dough into balls, cover, and let the dough rest for 15 to 20 minutes. The dough is ready to be shaped.

Yield: dough for 2 (12-inch) pizzas i know this doesn't seem italian but trust me it is

this is called prego skillet chicken
1/4 c grated parmesan cheese,1and 1/2 prego spaghetti sauce,1 tblsp olive oil,1and 1/2 lbs boneless chicken breasts,1&1/2 c shredded mozarella cheese,
stir parmesan cheese into prego sauce ,Heat oil in large skillet over med-high heat ,add chicken and cook untill browned . Pour sauce mixture over chicken . Cover . Cook over med. heat 10 minutes or untill chicken is no longer pink.
Top with mozarella and remaining parmesean. Let stand 5 min or untill cheese is melted . good luck and enjoy and hope the kids like what you fix.
