Why would my adopted dog be mean to my dad but be nice and sweet to me(son) and my mom? could he be an alpha?

It's probably something with the dogs background. Perhaps the dog was abused by a man who looks similar to your father. It also probably doesn't help if your dad teases the dog. If it's an alpha thing he would try to dominate everyone. I'd suggest some bonding time for the dog and your dad, have your dad take the dog for a long walk. My dog has always been hesitant towards men, however she's always jumping on females. (she's not mean towards men, just a bit distant until she gets to known them).
