Using Photoshop you can do that.

Select the area to make Black & White using the Marquee Tool and Select, Image - Color Balance and move the slider to the Black & White position.

The selected area will change to Black & White while the other areas will retain its original colour.

All you probably have to do is copy to clipboard ( the mac equivalent of control-c, the mac code should be roughly the same) the area you want to keep the same, then change the picture, and then paste the area that you didn't want changed back onto the picture exactly where it was before.

Using a graphic program such as GIMP (free at http://download.com ) convert a copy of the picture to black and white. Then go back to the original color version and use the selection tool to copy the item you want to remain colored. Paste it over the black and white version of the picture.

The best thing you can do is to have some type of software that lets you do it. Otherwise you're stuck. Most software is soooo expensive for anything good. Check out GIMP. It's completely free and it's pretty good. Just type GIMP into your search engine (use all caps) and the link to the site should pop up. You can follow the instructions from there.

If you are trying to convert the image to black and white and keep your original, you should have an option to Save As. When you do this you can re-name the image you are converting without overwriting the original.
