My grandma always made Harvest soup. Beef, onions, turnips, carrots, potatoes, peas and tomatoes in a beef broth. She always served it with homemade sourdough bread. When I make it I always think of her and the time we spent at the farm.

My mom made this one time for us when we were younger but I will never forget it and I made it once. I WILL make it for my kids this year.

1 cooking pumpkin (I was told that there is a difference so ask at the store)
Take off the top and scrape out seeds. Rinse well. Now add these ingredients in the quantity that YOU would prefer:
diced apples, raisins, walnuts, brown sugar, cinnamon, butter. Put top back on and bake on a jelly roll pan at 375 till you can stick a fork thru the outside. Scrape out the insides and enjoy. It's so good!

I really enjoy winter squash--acorn and butternut squash. You don't really need a recipe for this--just halve the squash and remove the seeds, then place cut-side down in a glass baking dish with water in the bottom, and bake until soft (probably 400 degrees F would be good, about 45 min-1h). Remove the squash from the peel, and mash it will a little butter. You can add a little brown sugar, cinnamon, and/or nutmeg to tast if you wish. Really good, and healthy too! :)

I love love love this recipe that I make every Fall (for 10 years). I call it Pumpkin Soup but it's made with acorn & butternut squash. I leave out the cream...not even necessary! I don't usually make the croutons....it tastes good with a nice crusty bread too:

Winter Squash Soup with Gruyere Croutons
from Bon Appétit, December 1996 (also on Epicurious.com)

In France, this soup would be prepared with a baking pumpkin. A mixture of butternut and acorn squashes mimics the French pumpkin's exceptional taste and texture. Pour a lightly chilled rosé with this colorful first course. Either a Rhône Tavel or a Provençal Bandol would be lovely.

Servings: Serves 8.

Soup
1/4 cup ( 1/2 stick) butter
1 large onion, finely chopped
4 large garlic cloves, chopped
3 14 1/2-ounce cans low-salt chicken broth
4 cups 1-inch pieces peeled butternut squash (about 1 1/2 pounds)
4 cups 1-inch pieces peeled acorn squash (about 1 1/2 pounds)
1 1/4 teaspoons minced fresh thyme
1 1/4 teaspoons minced fresh sage
1/4 cup whipping cream
2 teaspoons sugar

Croutons
2 tablespoons (1/4 stick) butter
24 1/4-inch-thick baguette bread slices
1 cup grated Gruyère cheese
1 teaspoon minced fresh thyme
1 teaspoon minced fresh sage

For soup:
Melt butter in large pot over medium heat. Add onion and garlic and sauté until tender, about 10 minutes. Add broth, all squash and herbs; bring to boil. Reduce heat, cover and simmer until squash is very tender, about 20 minutes.
Working in batches, puree soup in blender. Return soup to same pot. Stir in cream and sugar; bring to simmer. Season with salt and pepper. (Can be made 1 day ahead. Chill. Rewarm over medium heat before serving.)

For croutons:
Preheat broiler. Butter 1 side of each bread slice. Arrange bread, buttered side up, on baking sheet. Broil until golden, about 1 minute. Turn over. Sprinkle cheese, then thyme and sage over. Sprinkle with salt and pepper. Broil until cheese melts, about 1 minute. Ladle soup into bowls. Top each with croutons and serve.

I love pumpkin bread. I got a wonderful recipe off of allrecipes.com. Also, green bean casserole. My mom always made it for Thanksgiving. My husband's favorite is grilled cheese and tomato soup. Simple, but very homey!!
