Do you mean theme parks or just parks in general?
If you mean parks in general then in my area there is

El Dorado Park-Long Beach (very large and can accommodate large parties
Wilderness Park-Downey (large lakes with ducks)
Heritage Park- Cerritos (great waterfall for pictures)

I went to a gorgeous wedding at the LA Arboretum.

Have you considered El Dorado Park in Long Beach? There is a golf course with a clubhouse, and also apparently a community center that can be rented for weddings.

How much do you want to spend??? Disney is awesome, but incredibly expensive. Knott's is less unaffordable and I think still nice. Both of the parks have wedding coordinators that can send you all the info you could ever want.

It will really boil down to exactly what you want for your ceremony.
