You do realize that 99% of U.S. scientists believe evolution is good science... right?
We can't directly witness most things in this universe, yet people are smart enough to figure things out.
Take your computer for example - nobody has ever witnessed the quantum effects in the semi-conductors that make up the transistors in your computer's processor... but guess what! We figured it out anyways!

you are correct to say that people weren't there at the beginning... that's true whether you believe evolution or creation.
there is plenty of evidence, however, that evolution occurs and people have been there to see that for other organisms. In addition, there are plenty of fossils from animals that existed before people. Finally, there are molecular/biochemical data that show progressive evolution of advanced organisms from privative ones.

You'll never get an evolutionist to admit that there is a certain level of faith required to believe in evolution. They'll just say there is a ton of evidence and facts, (which I'm very familiar with, understand completely, and realize how it can be used to make a prediction... so spare me the lessons please) but really there is heavy reliance on faith in the science, the researchers, the evidence, the books, and the conclusions that are to be drawn from the evidence. 99% of evolutionists, if not more than 99%, must rely on faith and on books, just like Christians rely on faith and the Bible. Who is right? I don't care. Both sides are hypocrites. I see the same people talking about "evidence" here, where on other questions, "evidence" is meaningless, and "proof" is everything. Ahh... good 'ol double standards. Tsk tsk.
Either way, it's fun to talk and argue about.

Clearly, there is much you have yet to learn about the scientific process. But, that's OK. Keep learning and the more you learn, the more you'll understand.
The evidence for evolution is overwhelming. It's not a guess.

How do you know that the Bible is the word of God if you weren't born when it was written?
How do you know that God created Adam and Eve if you weren't born when it happened?
How do you know that The Battle Of Stalingrad in World War Two happened if you weren't born when it happened?

Evolution simply says that populations (specifically their allele frequencies ) change over time. This is a fact which is readily observable. It has nothing to do with any alleged creation.

How do Christians believe in Creation when there wasn't anyone around to witness it?
Ridiculous, enroll yourself in remedial science class.

Evolution has been proven by observation of fossils and by common sense based on factual occurrences.
