This would be for a bread recipe that uses Yeast and is made by hand not a bread machine

If so how much can you add
how would you adjust the recipe

Do you think it would be possible to take out 1/4 to 1/2 of the oat meal and use oat-bran instead.

I have made home made bread by hand for years and years
I do know that some of it depends on the day so you always have to adjust the amount of liquid you put in it.

I have never used oat bran in breads

I want to start to make bread that is better for us

You can use the oat bran to replace some of the amount of flour called for. I would use no more than 1/4 to 1/3 cup per loaf. Just add 1/3 cup less flour than called for and add 1/3 cup of the bran. Sounds good....are there raisins or nuts in the recipe?

Substituting some oat bran for oat meal should be ok. If your loaves turn out a little smaller than you expected, you may have put in too much oat bran.

You should be more careful about substituting oat bran for flour. Flour provides the structure of the bread while oat bran will actually destroy some of that structure. So, if you add bran and reduce flour, you can start having problems quickly. As you use more bran, you will probably find that you need to add more water. It can be thirsty.

Your best bet will be to do some small batches and do side by side comparisons as you gradually raise the ratio of bran until you start to see the quality of the loaf go down.

I know wheat-germ can be added to cookie recipes, and no one can taste it (but it's healthy!) All you do is cut back on the flour by the amount you're adding the oat-bran. I wouldn't add too much at first, just a little (say 1/2 cup), to make sure it turns out okay. Then you can add more next time. Good luck!

Wow, thank you soooooo lots, i've got been looking everywhere for an Oat Bread recipe and could no longer stumble on a single one without wheat flour, bread flour, bleached flour, and so on., and so on.
