Your cookie will definitely be flat. But, if your recipe calls for one egg (let's say you just don't have any baking powder or soda in the house), then add a second egg white but whip it to stiff peaks and gently fold it into the cookie. It will give it some lift but it will be light and might be a little crumbly.

They won't rise. Your cookies won't be fluffy, they will be flat and chewy.
