I have to make potatoes for 20 people, and they have to stay hot for about 1 hour. I was thinking about baking them in aluminum foil, but does that make the skin soggy? Mashed potatoes is another option, or perhaps a mashed casserole dish. There is no oven space available, and no microwave, so I will be hauling from home. How do they do that in a restaurant, do they just depend on the heat lamp? Any suggestions would be much appreciated.

Make mashed potatoes and put them in a crock pot and plug it in when you get there. It will keep them hot. But don't keep them hot in there for longer than 2 hours. Also, be sure and give them a stir every so often so the top doesn't dry. You definitely keep them covered with the pot lid. The reason you don't keep them hot in there for longer than 2 hours is it messes with the flavor. Put it on low.

I used to cook 36+ baked potatoes a night at a restaurant. We wrapped them in foil to bake them. Make sure they're *totally* dry before wrapping and baking. Bake as normal. Then we'd toss them in a huge stockpot. (Not on a burner) They'd stay nice and warm all through the service. They keep themselves warm by being piled on top of each other.

I would bake them with the tin foil. Under bake them about 10 minutes because they will continue to cook in the foil. Stick them in some kind of container....maybe a cooler and keep the lid on to keep the heat in.

Bake the potatoes (or microwave...your choice), then wrap them in layers of linen and put them in a bowl or basket, and make sure they're all close together. The cloth will keep them warm for quite a while.

If you made scalloped potatoes or something like that, they sell these nice 9x14 dishes with an insulated carrying case that would work very well. You can find them at Target. Of course for 20 people you might need more than one.

Cook them as you wish and transfer to a ceramic container/s and wrap in tea towels. If you can get them there are some hot/cold pads available. They are either heated in a m/w or frozen in the freezer.
Pack them into a chilly bin or an insulated bag.

Bake them without the tin foil but wrap them when they are done, wear oven mitts!!! If you have an cooler, put them in that it will help hold the heat in.

Can you take a crock pot or electric roaster and plug it in? If so, you can make any type of potatoe casserole right in the crock pot, or make baked potatoes or mashed potatoes and keep them warm in the crock pot. Best of Luck!
