Italian Seafood Alfredo

Half a pound boiled fettucini noodles (boil 12 minutes in water with teaspoon salt and teaspoon oil)

One t. chopped garlic

One t. chopped basil

One T. nonfat margarine

6 oz. nonfat sour cream

5 oz. romano cheese

1/2 te. salt

1/2 t. pepper

4 oz. of scallops

4 oz. of bay shrimp

1/8 C. sherry

For the alfredo sauce, mix your margarine, garlic, basil, salt, pepper, sour cream, romano cheese in a sauce pan. Stir on high heat until smooth.

Saute the seafood in a separate pan with a teaspoon of margarine and 1/2 teaspoon garlic, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/8 sherry cooking wine.

Stir for 3 minutes on high heat, then pour it into the pan with your alfredo sauce.

Simmer for 4 minutes on low heat. Then put fettucini noodles into the pan, mix well and serve.

Serves 2.

Or you can make your own!! At the grocery store, pick up a jar of 4 cheese alfredo, warm it slowly in a sauce pan, add 1/2 can (drained) of salmon, 1 tablespoon capers, and a pound or so of salad shrimp. Serve over pasta and asparagas tips. Its delicious!!

Easy Crab Pasta Alfredo

INGREDIENTS
1/2 cup butter or margarine
1 cup whipping cream
1/8 teaspoon ground nutmeg
1 cup shredded Parmesan cheese
1 (16 ounce) package fettucini
1 can lump crab meat

DIRECTIONS
In a saucepan, melt butter over medium-low heat. Add cream and nutmeg; heat through but do not boil. Stir in Parmesan cheese until melted. Cook fettucini according to package directions; drain. Transfer to a large serving bowl. Add the cheese sauce and crabmeat and toss to coat. Serve immediately.

Piccolinos in Napa. It's the only thing I order there. Lobster, crab, shrimp, and the sauce is so rich. It's perfect.
