my anniversary is coming up, and though its simple, reubens are my lovers Favorite, and I've never made them for him before. depending on the weather, desert will be a triple layer chocolate mousse cake, or a decadent blackberry cobbler. I need 2 other dishes to go with this, preferably cool dishes but anything contributed will be looked over. the anniversary is sunday...help!

Tangy Trio Bean Salad

Ingredients

* 2 cups frozen French-cut green beans
* 1 can (15 oz.) chickpeas, drained
* 1 can (15 oz.) red kidney beans, drained
* 1 cup drained Krrrrisp Kraut® or Silver Floss® Sauerkraut
* 1/2 cup chopped red bell pepper
* 1/2 cup fat-free raspberry vinaigrette
* Salt to taste

Tangy Trio Bean Salad

Cook green beans according to package directions. Drain; rinse with cold water. In large bowl, stir together cooled beans and all remaining ingredients. Serve immediately, or refrigerate overnight to blend flavors.

Servings: 8

Per serving (1/2 cup salad without salt): 127 calories; 6g protein; 24g carbohydrate; 7g fiber; 1g fat; 0g saturated fat; 0g trans fat; 0mg cholesterol; 464mg sodium.

German Potato Salad
IINGREDIENTS

* 4 potatoes
* 4 slices bacon
* 1 tablespoon all-purpose flour
* 2 tablespoons white sugar
* 1/3 cup water
* 1/4 cup white wine vinegar
* 1/2 cup chopped green onions
* salt and pepper to taste


DIRECTIONS

1. Bring a large pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, cool and chop.
2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve bacon fat.
3. Add the flour, sugar, water and vinegar to skillet and cook in reserved bacon fat over medium heat until dressing is thick.
4. Add bacon, potatoes and green onions to skillet and stir until coated. Cook until heated and season with salt and pepper. Serve warm.

With Reubens being your Honey's fav, here is a twist on the Reuben - a Reuben Casserole. It tastes just like the sandwich, has basically the same ingredients (a little less bread but all the good stuff). If you happen to have a toaster oven, you can bake it on the back porch and keep your house cool if it's hot where you are. You can't go wrong with this recipe.

Here's the recipe:

REUBEN CASSEROLE

Put in layers in the following order:

Drained sauerkraut
corned beef in flat slices (you can use deli corned beef)
Swiss cheese - shredded
Thousand Island Dressing
Rye bread torn into bite-sized pieces
Drizzle with butter
Sprinkle with caraway seeds

Bake in preheated 350º oven for 30-40 minutes until hot and bubbly.

If you want to make your own Thousand Island Dressing, here's a recipe:

THOUSAND ISLAND DRESSING

Take a water glass and pour in 1" of pickle juice (sweet or sour - your choice)
Add 3 T catsup
Add 2 T mustard
Add 1/3 c mayonnaise
Add 1/3 tsp celery seed
Add black pepper to taste
1/2 tsp ground cayenne or red pepper (kicks it up)

Stir everything together. Ok to have some white lumps - that's the mayo.

The original recipe called for thin-sliced tomatoes after the dressing but the person I received the recipe from said it made it a little soggy. Make a solid layer of each item listed. Don't skimp on the dressing and cheese. Very good.

I presume you're talking the sandwich, so the perfect accessory to a Reuben would be (a) German Potato Salad or, if you don't want to serve the warm salad, try (b) Redskin Potato Salad as a complementary side. A third dish in addition to dessert would be overkill, I think. If you really want to, though, add something crunchy, like carrot and/or celery sticks.

Unless he's a chocolate freak, the blackberry cobbler would also be a terrific accompaniment.

mmm...I love reubens and I think they are so yummy with a nice caesar salad and fruit such as any type of melon, grapes, kiwi, and strawberries.


INGREDIENTS
1 head romaine lettuce
3/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 tablespoon ground mustard
1 clove crushed garlic
1 egg
1 lemon, juiced
freshly ground black pepper
1/4 cup grated Parmesan cheese
1 1/2 cups garlic croutons


DIRECTIONS
Clean lettuce thoroughly and wrap in paper towels to absorb moisture. Refrigerate until crisp, at least 1 hour or more.
In a bowl or jar combine oil, vinegar, Worcestershire sauce, salt, mustard, garlic and lemon juice. Whisk until well blended.
Coddle egg by heating 3 cups of water to boiling. Drop in egg (still in shell) and let stand for 1 minute. Remove egg from water and let cool. Once cooled crack open and whisk egg into dressing. Whisk until thoroughly blended.
Mash desired amount of anchovies and whisk them into the dressing. If desired set aside a few for garnish.
To assemble, place torn lettuce leaves in a large bowl. Pour dressing over the top and toss lightly. Add the grated cheese, garlic croutons and freshly ground pepper, toss. Serve immediately!

I say do the chocolate cake. For sides make home made potato chips. They are like 100000 times better than store bought. And some sort of fresh tasting salad. Maybe a pineapple cole slaw?

Aaargh Mr President!! You are really tormenting me with all this talk of chocolate cake, treacle sponge and stuff!! Stop it now young man - I can nearly taste that bloomin' cake by the way you have described it, and I am now off to raid the fridge lol!!! :o) xxxx
