General rule of thumb:
Toning - 2 to 3 sets of 15 to 25 repetitions
Building - 3-5 sets of 6-12 repetitions

This varies within the rough perameters from one individual to another. As pull-ups are generally found to be one of the harder exercises, I would start off aiming for three sets of around ten reps and then develop it from there, depending on how you respond.

Try alternating between chin-ups (using a narrow, underhand grip) and pull-ups (using a wide overhand grip) on each workout or between each set.

You should only train a muscle every other day at most - it needs 48hours recovery time.

Also try using other back exercises to mix things up a bit, such as lat pulldown, seated row, single arm row, bent over row. Ask a fitness instructor if you need more help.

as many as you can.

There is a former military guy that has created total body workouts based solely on body weight exercises. Very high reps.

Depending on how many you can do I would shoot for 8-10 sets if that is the only back workout you have to do. Try doing this. 1 pull up, then imediately drop and do one pushup. Now repeat for as many as you can do. You will boviously stop being able to do pullups before pushups, so after you reach failure on the pull up go to failure on the pushups. Work towards completing more and mroe sets. Set a goal of 20, 50, 100 complete sets.
Pull ups/chinups are a great workout and there are several plans on the internet to utilize the move and increase your strength. Try a search on google.

this depends on how long you have been training

be sure to use a wide grip

if you work up to about 6 - 10 reps, and you can do that without stopping then the general bodybuilding recommendation is to ADD WEIGHT so that you can only complete 4-6 reps before failure

add weight means around your waist, at your ankles, etc.

you can also do lat pulldowns on a lat machine
