treat yourself to a night out. monday is usually a blah day (first day of work week) liven it up and go to someplace like chipotle's,olive garden, or grab a bucket of chicken and head to the park.

We're having a "sad" food night. I'm making my hubby's Glop, as I call it. It's tuna, cream of mushroom soup, garlic powder, a little milk, frozen peas, and served over toast. I'm sure I'm forgetting 1 ingredient. It looks like Glop, but it's really good.

But we'll make up for it tomorrow with a corned beef brisket and taters.

I'm making pork chops to. I am serving with homemade applesauce and mashed potatos and gravy. I think the veggie will be green beans.

Here is our for tonight:

*******Slower Cooker Meatloaf

INGREDIENTS
2 pounds lean ground beef
2 eggs, beaten
3 tablespoons ketchup
3 tablespoons dry onion soup mix
3 tablespoons steak seasoning
3 tablespoons ketchup


DIRECTIONS
In a medium bowl, mix together the ground beef, eggs, 3 tablespoons ketchup, onion soup mix and steak seasoning using your hands. Pat lightly into the bottom of a slow cooker. Spread remaining ketchup over the top. Cover, and cook for 6 to 8 hours on Low, or 4 hours on High.
Variation

Layer half of the meatloaf in the bottom of the slow cooker, and top with 1 cup of shredded cheese. Top with remaining meat and glaze; cook as stated above.

***********QUICK BACON GARLIC MASHED POTATOES
5 or 6 red potatoes
milk,
dash of garlic powder
butter
half jar of Real Bacon bits
salt and pepper
Peel potatoes and boil until soft, mash potatoes, add a little milk a dash of garlic salt, 2 to 4 tablespoons of butter. add a jar of real bacon bits salt and pepper to taste mix through.

********BRUSSELS SPROUTS AU GRATIN
1 1/2 lbs. fresh or 20 oz. frozen Brussels sprouts, trim and rinse if using fresh)
1 1/2 tbsp. butter
1/4 tsp. salt
2 tbsp. flour
6 tbsp. milk
1 c. sour cream
2 tbsp. grated Parmesan cheese
Shredded Cheddar cheese
Cook Brussels sprouts until tender not mushy in boiling salted water. Drain well and place in shallow baking dish. Make a thick sauce by melting the butter in a saucepan. Add flour and salt. Cook a minute or so. Remove from heat and gradually stir in the milk and sour cream. Return to heat and cook until thickened but not boiling. Stir in Parmesan cheese and pour over the sprouts. Sprinkle with Cheddar cheese. Place in hot oven or broiler to melt cheese. Serves 6.

******PEACH COBBLER PIE

1 package of pre-rolled pie crust
1 1/2 cans of sliced Freestone peaches
cinnamon-just a little
sugar
butter
nutmeg (pinch)
This is one easy peach cobbler that can be made with a store-bought crust and canned peaches.
Preheat oven to 350. Move the bottom crust into an 8 in square pan, pinch and shape into place. Put in peaches and juice from 1 can (more if you like), add pats of butter, sprinkle with sugar, cinnamon, and just a pinch of nutmeg.
Top with a prepared purchased top crust, pinch and shape over bottom crust to seal. Cut slits and sprinkle lightly with sugar if desired.
Put in 350 oven and bake until brown and bubbly top and bottom.
