It is suppose to allow the chicken to rest and absorb the spices. A marinade will do the same but better I think. Keeps the chicken juicy. Just remember to always refrigerate chicken right away and wash any thing that comes into contact with the chicken including your hands!

Hello:
It is called marinade and I don't do that with my chicken. I just take my chicken out of the fridge,wash it really well,pat it dry,and then cook it on the stove. I don't like alot of seasonings or spices on my chicken unless I am making homemade chicken noodle soup.

Honestly, I've never heard of anyone doing that before. I usually just season it right before I cook it. Unless, you want to try to marinade it...in that case I would leave it in the refrigerator for a few hours in the marinade before cooking.

It just lets the flavour soak through the meat. If the seasoning is salty at all it will also make the meat more tender.
