I sometimes do this because I speak out loud as I type. It helps me to keep my train of thought on track. Unfortunately, it's gotten me into the habit of including "space savers" in my typing. The only reason I didn't start this answer out with "okay," "well," or "let's see," is because I'm making the conscious effort not to.
It's probably a similar circumstance with other people as well:)

OK, so it's a verbal oddity that some people start sentences with "OK."
When speaking, it's sort of like saying "I'm going to start my explanation or narrative now, am assmebling my thoughts, and expecting your attention."
Some people write like they talk.
OK?
;-)

"OK" is sure a lot better than a message starting with IDK and then filled with tons of text garbage.
