I start by cleaning and prepping. I use a little EVOO and add several spices including, salt, pepper lemon zest, cuman, a dash of curry powder and sliced onion red if have on hand. I slice the fish with several slits and let the seasoning get into the slits and place onion in each one as well. I then drudge it in a light mix of 1/2 cup all purpose flour and complete cornmeal mix. I beat an egg and pour over and re drudge the fish again. If you fry you put in iron skillet sprayed with Pam and a little olive oil and fry on each side for about 4 minutes each depending on the thickness of the fish. If you broil put under the broiler for about 6 minutes each side don't forget to turn it. I serve it with couscous and on a bed of cooked spinach. I take the old hush puppy recipe and make a scone like out of it and serve with homemade tartar sauce. The lemon wedge to me is out, some people have GERD now and the lemon irritates the tummy so I used the lemon zest found in the spice section I used the McCormick's brand and it lasts forever and stays good on the shelf.

lemon slices,orange slices,apple slices:wrapped in tinfoil fruit on boyh sides on grill or on bar-b-q...on grill i do medium in oven i do 375...its yummy u can put fruit inside too takes that fishy taste out.good luck
