It depends on where the folds are. The folds in the lining of the stomach are called rugae, while the surface of the brain is made up gyri and sulci, which together make folds. (The sulci are the grooves and the gyri are the parts that bulge out). So, for a definitive answer, you'll have to ask a more specific question.

Corrugation in general. But it`s not totlly medical term.
