While taking pics in rooms with dark wood floors/walls the flash changes the settings on it's own. An example would be if I was not getting enough light in the room but to much sun glare in the windows I would set the shutter speed to say 125 and set the flash to 1.3 and then the flash will change itself to -.7 during the shot. Any ideas?

Are you sure that the flash is changing itself during the shot? If you have underexposed, the flash will display the underexposure value immediately after the shot. Maybe you have underexposed by -0.7.

If this isn't the case, there are so many modes that do stuff that I don't know about. Maybe it's time to reset to factory defaults and start again. Hold the mode button AND the on/off button for about 2 seconds to reset to factory defaults.

Why not set the camera on Program, and the flash on DTTL?

I'm not sure exactly which flash setting you're using - probably Auto or Manual.

but there's no reason that that camera/flash combination shouldn't work almost flawlessly with Program and TTL.

Here is a really novel idea: READ & STUDY the Owner's Manuals that came with your camera and flash.

There is no "magic wand" someone can wave to make you a competent photographer. You'll have to do it the old fashioned way - study the Owner's Manuals.
