I think this is the best meatloaf recipe and the gravy goes really well with it.
i usually serve it up with mashed potatoes carrots and peas
Yummy Meatloaf
2 lb ground mince meat, 2 eggs, 1 1/2 c bread crumbs, 3/4 c ketchup, 1 1/2 t salt, (or 1 tsp Accent), 3/4 t pepper, 1pkg.french onion soup mix, 1 can (8 ozs) tomato sauce.
In bowl, mix first 7 ingredients, then transfer into a meatloaf pan. Pour the tomato sauce over the top. Bake 1 hour at 350 degrees. Serves 6.

Recipe Ingredients
Vegetable Oil 1 tbsp
Red Onion 1 . Thinly sliced
Plain Flour 1 tbsp
Water 2 cup(s)
Tomato Sauce 2 tbsp
Italian Herbs 1/2 tsp
Recipe Directions:
Heat oil in a small saucepan, add onion and cook until soft.
Remove saucepan from the heat and stir in flour, return to heat and stir constantly for 1 minute.
Remove from heat again and stir in half water, stirring continously return to heat. Stir while mixture thickens and comes to the boil.
Add Tomato Sauce, Italian Herbs and remaining water, continue stirring while gravy thickens

My mom (and I) make a great meatloaf. Some ingredients are approximate (but close!) because it's kind of just thrown together!!! Also, it makes a full size one and a small one or 2 med. ones.
Meat Loaf...
1 md. onion, coarsely chopped
1/2 red sweet pepper, chopped
1/2 cup milk
1 egg
6-8 drops "Tabasco" sauce
1/2 tsp. Lea & Perrins worstershire sauce
3/4 to 1 tsp. salt (to taste!)
1/4 tsp. pepper
1 tsp. dry mustard
2 handfuls seasoned dry stuffing cubes
1 3/4 lbs. ground beef
1 can, Campbell's mushroom soup
Mix first ingredients, including the stuffing cubes. Add beef and soup. Put into ungreased meatloaf pan(s) and cook til done. Optional: I like to get cleaned, whole mushrooms and stick them into meatloaf after 1/2 is in pan, then cover with rest of mixture... Cook average sized meatloafs 1 to 1-1/4 hr.(adjust time if making any smaller ones!) at 350, let sit about 15 minutes or so after out of oven.
**Great cold too with mayo! Mushrooms make it fall apart a little easier, but I love mushrooms!!!

Make your favorite meat loaf recipe
Form into loaf and place in baking dish.
On top of loaf place slices of bacon to cover
spread about 1/3 cup of catsup over bacon
Lay onion slices over
Sprinkle 3 tablespoons brown sugar over
Cover with foil and bake
My secret ingredient? The sauce.

***********STUFFED MEATLOAF
2 lbs. ground beef
Beef Stove Top stuffing mix
1/2 c. finely chopped green pepper
1/2 c. celery, chopped
1 med. onion, chopped
1/2 tsp. garlic salt
1 tsp. salt
1/2 c. grated carrots, optional
2 eggs, beaten
3/4 c. bread crumbs
Prepare Stove Top stuffing according to box directions; set aside. Crumble ground beef in large mixing bowl; add all other ingredients except stuffing. Mix well using hands.
Place on sheet of foil big enough to wrap meatloaf for baking. Flatten meat mixture out; add stuffing mix on top. Using edge of foil nearest you, begin to roll meat mixture and press together all edges. Now completely wrap loaf with foil. Place in baking dish. Bake at 350 degrees for 2 hours. Remove from oven; let stand 5 minutes before serving.

I like to add a small amount of thyme. I brown it with the onions & garlic. Add about 1/4 cup of ketchup to the meat, and slather the finished loaf with another 1/4 cup. Cover with bacon before putting into the oven. Good stuff!
