like if a french recipe says preheat oven thermostat 7 what's that equal to in the american thermostat??

To convert metric temperatures (in Celcius), you multply by 9/5 and then add 32. Or to go from your desired temperature in Farenheit, you subtract 32 and multiply by 5/9, and that's your result.

Here is a link to a table. Gas Mark 7 is the same as 425 degrees F.

French "thermostat" settings are NOT the same as British "gas mark" setting. Thermostat 7 = Gas mark 6 = 410 °F.
