My husband and I do alot of adventurous hiking and thankfully we have never had any accidents or gotten lost in the mountains but, if for some reason we were stranded in the mountains with no food, does anyone know of any educational websites where we can find pictures and names of plants that are edible and also survival tips?

That will be highly dependent on where you are hiking. You might consider carrying a GPS so you can be less lost
Toss in a couple of space blankets and a couple of plain condoms (they make pretty good emergency water bags and weigh next to nothing) and some matches.

Because I live in the PNW, not far from where the three mountaineers died on Mt. Hood last year, the Kim family was found, and Doris Anderson, 76, was found 16 days later, alive,

sounds interesting. You can manage for several days without water, several weeks without food, but hypothermia will kill much quicker than you can die of starvation or dehydration.

There is a lot of great books on survival in the wilderness. My personal favorite is the one by SAS (british military). Eating plants can be dangerous if you are not an expert. You have to read a lot about it, particularly about the flora of the especific place that you are going to visit.
