6 large eggs
6 teaspoons (1 teaspoon for each egg) low-fat milk
3 dashes of salt (1 dash for every two eggs)
1 Tablespoon butter for frying
Heat a large non-stick frying pan to a setting just above medium. A 12-inch pan works well for 6 eggs. Do not add butter yet. We just want get the pan ready.
In large metal or glass mixing bowl, whisk the eggs with the milk and salt. Beat vigorously for 2 minutes.
Alternatively, you can place the eggs, milk and salt in a blender and blend for 20 to 25 seconds. Allow the mixture to set for a couple minutes to let the foam settle.
Melt the butter in the frying pan. As the very last of the butter is liquefying, add the egg mixture.
Do not stir immediately. Wait until the first hint of setting begins. Start the Martha Stewart scrambling technique ("Using a spatula or a flat wooden spoon, push eggs toward center while tilting skillet to distribute runny parts.")
Continue this motion as the eggs continue to set. Break apart large pieces as they form with your spoon or spatula. You will come to a point where the push-to-center technique is no longer cooking runny parts of the egg. Flip over all the eggs. Allow the eggs to cook 15 to 25 seconds longer. Transfer eggs to serving plates. Add salt and pepper to taste.

In a mixing bowl, break 2 eggs per person. Add salt and ground pepper.
Beat well with a fork or whisk.
In a nonstick pan to accomadate the amount of eggs you have, melt butter at medium heat or spray Pam.
Pour eggs into pan, and WITH A SPATULA, move the eggs from the outside to the inside of the pan, while rolling the pan side to side over the heating element. The idea is that they should be soft and not dry. Take them off of the heat when they still look slightly wet and toss one more time. Put on warmed plates.

Don't ever make it in a micro wave! It's simple enough as it is. Gordon Ramsay's is the best. For 2 people, put 4 cold squares--about a centimetre each - of butter into a frying pan-add 3 eggs, a little salt and a little black pepper. Stir it over a high heat but keep removing from the heat every 30 seconds or so,but keep stirring. After about 3 minutes it will be a lovely creamy texture.Serve straight away on warm muffins or toast.NEVER add milk or water.Sacrilege!

INgredients: Eggs (2), oil, skillet, salt, pepper, milk (optional), cilantro (optional).
Heat a skillet on low flame and a table spoon of oil.
Break egg shell (two eggs), empty contents into a bowl, add some salt and red chilli powder if needed and whisk lightly. You can add some milk if you want and mix it lightly and then pour into the hot skillet. Every 15 seconds turn over the mixture with a flat ladle, till most of the material is a pale yellow color and starts solidifying. Switch of skillet and add some chopped cilantro on top. Wait for a minute and serve.

******TEXAS STYLE FLUFFY SCRAMBLED EGGS
desired amount of eggs
2 tsp. whole milk
thinly sliced white American cheese (if desired)
Butter the pan and heat until the butter melts. Pour egg yolks into a bowl and scramble into a liquid (must be completely yellow). Combine milk with eggs and scramble until mixed.
When the butter is melted in the pan, add eggs and stir.
Stop for 5 seconds and stir again. When you see little scrambled eggs in the pan, add cheese (cut up) and stir until no liquid is in the pan (all scrambled).
Serve and enjoy.

How many you are cooking for changes how many eggs. But for myself, 1 egg, dollop of milk, dash of vanilla, salt, pepper and shredded chesse (usually sharp cheddar). Whip well with fork, and pour into a hot skillet with melted butter. Stir while cooking to keep them fluffy and enjoy. Maybe some jalepeno peppers if I want it spicy. Or add some crumbled bacon, chopped ham. I think you can put everything but the kitchen sink into scrambled eggs.

This is going to sound "different" but it is delicious! This is my husband's recipe...
Scrambled Eggs and Bean Sprouts
Ingredients:
6 eggs
1/4 cup chopped green onions
Butter
Soy Sauce
Bag of fresh bean sprouts
1/4 cup milk
---
Sautee chopped green onions in frying pan. Meanwhile whisk eggs and milk and add 4-5 dashed of soy sauce. Rinse bean sprouts and add to egg mixture....add all to the frying pan with the sauteed onions....cook until done. Serve over toast...delicious!!

This is my favorite. Whisk up about 6 eggs with a hearty splash of milk. Cube up about 3 oz. of softened cream cheese. Heat some butter in a big skillet and pour it all in. Don't let the bottoms burn, use low heat. And keep shoving it around with a spatula until it's set up. Sprinkle with chives and serve with salt, pepper, and hot sauce.
