The Taliban subscribes to an ultra extreme variety of Islam in which your entire life must revolve around Islam. According to their interpretation of the Koran, women should only be given the most meager of educations. Women must be completely subservient to men. The Taliban believes that the U.S. will corrupt the morals of their land by introducing dangerous ideas about freedom, equality, and self-determination.
The Taliban realizes that their idea of an Islamic utopia is impossible as long as people have access to the outside world. Radical Islam can only live on lies, much the same way that the Communist East German government was only able to pacify their population as long as they could convince them that they were living in a "worker's paradise", and that people in the West were dying of starvation and wanted to immigrate en masse into East Germany (and hence the need for the Berlin Wall.... to keep people from flooding INTO East Germany...... can you believe the audacity of this lie? Well, it's the kind of total lie required in totalitarian regimes. The risk of people hearing the truth is for the Islama fascists like sunlight is to a vampire.).
The Taliban knows that once people see the world the way it truly is, they won't cling to tightly to conservative Islam. The youth will want to dance, play Western music, and have a normal social life with members of the opposite sex. The only way the Taliban can keep the people under control is by controlling what they see and hear, and the U.S. makes that impossible.
The Taliban would not leave us alone even if we withdrew from the Middle East. They object to our way of life, our culture, our support of Israel, and refer to us as "infidels" and America as "The Great Satan" (just as Iran does). Their interpretation of the Koran requires them to kill all infidels. Even if we left, our influence would still be felt. They can't tolerate anything but total domination over people. Any remnants of freedom or cultural impurity degrade their ability to control people in the type of absolute manner they must to maintain power.

Don't confuse the Taliban with al-Qaeda. The Taliban just wants to go back to ruling Afghanistan (which is in South Asia, not the Middle East) in their extremely conservative theocratic fashion. They tolerated the presence of al-Qaeda, since both groups included many veterans from the jihadist insurgency against the Soviet occupation of Afghanistan, and bin Laden in particular helped bring Saudi money into the country. The Taliban weren't quite done vanquishing the other warlords and armed groups in the country, and were happy to get al-Qaeda support. But it was al-Qaeda that attacked the U.S., not the Taliban - their refusal to give up al-Qaeda is why the U.S. bombed then invaded and now occupy Afghanistan. When the Taliban have successfully driven the U.S. and NATO forces out of Afghanistan, it seems unlikely they'll initiate attacks beyond their borders, if only because they'll have their hands full for quite some time re-subduing their own population.
Al-Qaeda, on the other hand, has as its raison d'etre attacking the U.S., until they accomplish their goals: drive the foreigners out of the holy land (which in this case means the Hijaz, the area of Saudi Arabia encompassing the cities of Mecca and Medina), drive the foreigners out of Iraq (before the 2003 invasion they wanted the aerial bombardments of Northern and Southern Watch to end), and cut off foreign support to the Israelis. So unless the U.S. is prepared to accommodate these goals, al-Qaeda will continue operations against America, as it can.

They are simply an ousted Government trying to get back into power.

The values of our culture conflict with theirs. And when they have a fundamentalist religion that allows no other word than the Koran, and a population of disaffected young males to whom the promises of the Koran in regard to martyrdom sound awfully good, a bad situation is inevitable.
If I was absolutely convinced that eternal paradise awaited me with some improbable number of beautiful young virgins....Just for a quick death taking some infidels with me, Hell, I'd sign up in a minute. It sounds like a very good deal.

The Taliban doesn't like us because of our friendly relations with Israel and the fact that we sent troops to their holy lands. Look up some of Osama Bin Laden's recorded speeches.
