Lima beans are the only item that I wouldn't necessarily classify as soul food. However, the other foods mentioned would definitely fit that category. What about fried catfish and sweet potato pie? Yum. Soul means the essence of something,in the black culture it's the food, music, etc...

It was an expression in the 60's that black people have soul.
This meaning that they were closer to the meaning of life than
other people. Soul brother meant that they were linked by the special souls of black people. There was a show on TV that was called Soul Train. Mostly black participants.
It became a special identity that set black people apart in a good way. When they have church, they express a lot of spirit and soul power in the worship of God.
Soul food would then be another word for African American cuisine..

I'm told that for people from the deep South it has everything to do with their soul. Try taking it away from them and they risk their souls to get it back. I'm not a chittlins and pigs feet person myself, but I can understand their thinking.

soul food comes from the parts of the animal that the slave owners wouldnt eat, so they gave these leftovers to the slaves to cook with. It is very unhealthy...
