I have some beef in the rotisserie. The produce market had some really good looking baby potaotes. I bought 3lbs. Now I am wondering...Should I boil them in water? Or should I roast them with a little olive oil and other cut up veggies. I have some fresh arugula for a salad.

What do you think? Should I roast them or boil them?

Absolutely roast them! Baste with olive oil and then sprinkle them with kosher salt. Roasting deepens the flavor of these little babies!

Boil them and you risk losing the flavor and goodness that these mini potatoes have. BTW, they are great if you cut them in half and fry them. Crispy on the outside and creamy on the inside. A nice surprise.

***********QUICK BACON GARLIC MASHED POTATOES
5 or 6 red potatoes
milk,
dash of garlic powder
butter
half jar of Real Bacon bits
salt and pepper
Peel potatoes and boil until soft, mash potatoes, add a little milk a dash of garlic salt, 2 to 4 tablespoons of butter. add a jar of real bacon bits salt and pepper to taste mix through.

*******ROASTED POTATOES

potatoes of choice peeled and cut in quarters
1 tbsp. light vegetable oil
6 lg. garlic cloves, peeled and lightly crushed
1 cup chopped or sliced onions
Salt and fresh ground pepper to taste

Place potatoes in salted water to cover and bring to boil for 2 minutes. Drain thoroughly and cool. Preheat oven to 400 degrees.
Spread film of oil over the bottom of a heavy baking pan in which potatoes fit into a single layer. Add crushed garlic cloves and onions.

Roast in preheated oven for about 45 minutes or until potatoes are golden brown and tender. Remove garlic cloves if they begin to turn dark brown. Shake pan or turn potatoes several times during roasting. Add a little more fat or oil if pan seems dry.

Sprinkle potatoes with salt and pepper and stir to distribute seasonings evenly. Serves 4.

Potatoes
Potatoes soaked in salt water for 20 minutes will bake a lot faster. To get snowy white potatoes, add a teaspoon of vinegar or fresh lemon juice to the boiling water.

My father always boils potatoes of whatever kinds, or he'll cut one in half and microwave it for himself. I don't think I've ever had roasted potatoes, and if I did, it's been ages.

I would boil them, serve with lots of melted butter, salt, pepper and parsley.

roast them for sure, on the grill if possible
