please i have these two ham steaks and no idea how to prepare them also i have some canned pumpkin and i want to make dessert but dont' know what anything but pumpkin pie so please help i want a really good sunday dinner for my children Thanks

You have some good ingredients to start with.
Ham steak doesn't take long to prepare.

Put some orange juice in a nonstick pan (enough to come halfway up the sides of the meat), put the ham steaks in and put a top on.

Poach in the OJ for about 20 minutes--which means keep at a very low simmer. Just before serving, remove ham steaks to a warm plate, make slurry of 1 T. cornstarch and 1/2 C. OJ and stir into pan sauce--add just a touch of cinnamon and 1/3 C. raisins. Stir until thickened and raisins are plump. Sugar to taste can be added if necessary.

Oven cooked sweet potato crisps and steamed green beans would make some sides that kids will like.

Fix these cupcakes in a jiffy using spice cake mix, canned pumpkin and a prepared cream cheese frosting. Kids will love this sweet and spicy finger-food and clean-up will be a breeze.

Estimated Times:
Preparation - 5 min | Cooking - 18 min | Yields - 24 cupcakes (2 dozen)

Ingredients:

* 1 package (18.25 oz.) spice cake mix
* 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
* 3 large eggs
* 1/3 cup vegetable oil
* 1/3 cup water
* 1 container (16 oz.) prepared cream cheese or vanilla frosting

Directions:
PREHEAT oven to 350° F. Paper-line or grease 24 muffin cups.

BLEND cake mix, pumpkin, eggs, oil and water in large mixer bowl until moistened. Beat on medium speed for 2 minutes. Pour batter into prepared muffin cups, filling 3/4 full.

BAKE for 18 to 23 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely. Spread cupcakes with frosting. Decorate with assorted sprinkles, if desired.

pan fry or grill the ham steaks. it doesn't take long. just a few minutes on each side. as for dessert try this pumpkin brownie recipe

1 cup of pumpkin puree, canned or cooked

1 1/4 c. whole wheat flour

1 c. brown sugar, packed

1 tsp. baking powder

1/2 tsp. salt

1/2 baking soda

2 tsp. cinnamon

1/2 tsp. ground ginger

1 tsp. nutmeg

1/4 c. buttermilk

1/4 c. vegetable oil such as canola

2 tsp. vanilla

2 eggs, well beaten (further reduce fat & cholesterol by substituting 1 egg and 1 egg white, or 1/2 cup of Egg Beaters egg substitute)

1/2 c. walnuts, finely chopped

Makes 24 bars

Preheat oven to 375 degrees. Coat a 13x9x2-inch baking pan with vegetable spray.

Combine all ingredients and beat well. Pour into a prepared pan and bake for 30-40 mintues. Cool on a wire rack. Cut into bars.

Ham steaks can be cooked in a skillet on the stove, or you can put them in a casserole dish and cover them with scalloped potatoes and bake until done. That's what my mom used to do.

As far as the pumpkin dessert - here ya go! I really messed this one up the first time I made it, so please make sure to read the recipe carefully! I made the mistake of not reading the recipe well and made the "cake" per the box instructions, and that's NOT what you're supposed to do. I also used a larger can of pumpkin, so don't make that mistake, either. It still tasted good, but was still runny in the middle (we didn't eat that part lol).

Pumpkin Gooey Butter Cake

Cake:
1 (18 1/4-ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted

Filling:
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 (16-ounce) box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg

Preheat oven to 350 degrees F.

Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.

Serve with fresh whipped cream.

Here is another good pumpkin recipe:

Cranberry Pumpkin Muffins

2-cups flour
½-cup brown sugar
1-teaspoon baking soda
1-teaspoon cinnamon
½-teaspoon nutmeg
½-teaspoon salt
1-cup pumpkin puree
2-cups dried cranberries -- coarsely chopped
¼-cup walnuts -- chopped
½-cup oil – vegetable or if you have an orange olive oil
¼-cup milk
¼-cup molasses
1-egg -- lightly beaten

Combine flour, brown sugar, baking soda, cinnamon, nutmeg, and salt in a medium mixing bowl. Combine remaining ingredients in a separate mixing bowl. Add wet ingredients to dry, mixing just until the dry ingredients are moist. Do not over mix. Generously grease a 12-muffin tin and dust with flour or line with paper muffin cups. Fill muffin cups about 2/3-full with batter. Bake pumpkin muffins in preheated 350° oven for 25 to 30 minutes, or until nicely browned. Remove pumpkin muffins from tins to wire rack to cool.

Cook the ham steaks on the grill like you would a normal steak although the cooking time will be less. Marinade them with a little brown sugar mixture.

Make pumpkin bread with the canned pumpkin.
You can find plenty of recipes on the Internet.

I'm with Wes's Granny. Use brown sugar and pineapple slices for the ham steaks.
Here's a delicious recipe using canned pumpkin.

YUMMY PUMPKIN CAKE
2- 15 oz. cans of pumpkin
1- 12 oz. can evaporated milk
2 tsp. cinnamon
1 pkg Yellow Cake mix ( I use Betty Crocker Super Moist)
4 eggs
1 1/2 cups Sugar
1/2 tsp. nutmeg
1 cup melted butter
1 cup nuts
Beat pumpkin, milk, eggs, sugar and spices. Pour into ungreased 13"x9"x2" pan. Sprinkle dry cake mix over pumpkin. Pour butter over top. Sprinkle with nuts. Bake at 350' for one hour- no longer. Cool. Serve with Cool Whip. (This is more the consistency of a stiff pudding, rather than cake.)

******BAKED HAM STEAK
1 center cut ham steak (2-3" thick)
Brown sugar
Dry mustard
1 sm. can Pet milk
Hand pack ham with mustard and brown sugar. Place in heavy skillet. Cover with Pet milk. Bake covered at 325 degrees for 1 1/2-2 hours, until ham is fork tender

GREAT PUMPKIN COOKIES

4 cups unsifted flour
2 cups oatmeal
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 1/2 cups oil
1/2 cup white sugar
2 cups brown sugar
1 egg
1 teaspoon vanilla
1 1/2 cups canned pumpkin
1/2 cup nuts
1/2 cup raisins

Combine flour, oatmeal, spices, and salt. Set aside.
Cream oil, sugars, egg and vanilla on medium speed of mixer for 2 minutes.

Add 1/4 cup Libby's canned pumpkin and mix 1 minute more.

Add the remaining flour and pumpkin alternately. Stir in nuts and raisins.

Drop by rounded teaspoonfuls onto lightly greased sheet baking sheets.

Bake at 350F for 15-20 minutes or until firm and lightly browned.

Makes about 5 dozen cookies.

Unbaked dough can be frozen in air tight container. Thaw in refrigerator and bake as directed.

Keep it simple. Ham, corn, broccoli, and mac 'n cheese (the real home made kind) go together great. Kids love it and it is not hard to prepare.

As far as the pumpkin goes...whats wrong with pumpkin pie? :( LOL Do it a'la'mode for something different! Or make your own pumpkin pie Blizzard/ice cream! You just mash up the pie with ice cream...slightly do a re-freeze...serve into dishes...top with nuts or crumbled Nilla wafers if you want.

Put the ham into a baking dish and put some brown sugar and pineapple on them. Bake them at 350 degrees for about half an hour. Go to the store and get some instant pudding. There are tons of flavors. Mix the pudding with two cups of milk and wisk for two minutes. Put it in the fridge until it sets.
