the lining of the inside of my cheeks keeps peeling off. What's that about?

It keeps just going numb and the lining peels away if i scratch at it (which i seem to be addicted to doing for some reason).

Several things could cause you this peeling.
First, I would like to mention herpes simplex viral infection that is usually harmless. It could be also some fungal infection.
If this is a case that some antifungal oral medication should relieve your symptoms.
Even change of toothpaste could be the trigger for this peeling.
But I must mention that this could be also a sing of some sexually transmitted disease so paying a visit to your doctor could be crucial for setting the right diagnosis.

You might try Pro-Biotics like L-Acidophilis and L-Bifidis. It sounds like oral thrush and these pro-biotics help. It will take a few days though. Even if it isn't oral thrush, pro-biotics are good for you and not harmful at all. If that's the case, you might want to see a Doctor about that.
Being Gay, I have friends living with HIV and lost friends to AIDS. Oral thrush happens often with HIV positive people. So I've seen the affects and seen pro-biotics clear it up.
I'm not suggesting at all that you are HIV positive though.

A friend of mine had that, it's a fungal infection, (forget the name) go see the doctor for a mouthwash.
