The nuts are so healthy for you - why would you want to get rid of those?
You might want to try reducing it by a third or so. You might also try replacing half the sugar with Splenda. If you reduce the sugar by too much, the top won't brown as well or get that nice moist, sugary crust.

SUGAR FREE BANANA NUT BREAD
3 or 4 mashed bananas
1 tbsp. sweetener (10 pkts.) Sweet & Low
2 eggs
1 3/4 c. flour
3 tsp. baking powder
1/4 tsp. salt
1/4 c. chopped nuts
Sprinkle artificial sweetener over mashed bananas and stir until dissolved. Beat eggs and blend into bananas. Stir in dry ingredient. Add nuts, blend thoroughly. Bake in greased 9 x 5 x 3 inch loaf pan at 350 degrees for 25 minutes then lower heat to 300 degrees and continue cooking for 35 more minutes. Serves 10. Exchanges: 1 1/2 bread, 1/2 fat, 121 calories.

Here's a recipe from the back of a bag of sucralose sweetener (generic Splenda:)
1 cup sucralose sweetener
1/3 cup margarine or butter 9softened)
2 eggs
1 1/2 cups mashed ripe bananas
1/3 cup water
1 2/3 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/2 cup nuts (optional)
Preheat oven to 350° F. Grease bottom only of 2 small loaf pans or one large loaf pan. In a large bowl combine all ingredients. Pour into pan(s). Bake at 350° for 35 minutes in the small pans, or 60 minutes in the large pan.
If you are going to put blue berries in, it will probably take a little longer due to their moisture content.

Hiya Joe A. Yes you may substitute butter for shortening. Doing this will give you a much richer end product that have an awesome taste. You'll find yourself doing that very thing from here on in. Shortening was a cheap alternative to butter back in the day, still is. I have used butter flavored shortening also with great results, but nothing as good as using butter. I hope this helped, good luck. Now I have a taste for Banana Bread Muffins.

Try this recipe:
HOME-STYLE BANANA BREAD (SUGAR FREE)
3/4 c. mashed bananas
1/3 c. vegetable oil
2 lg. eggs
1/2 c. water
2 c. flour
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. chopped nuts
Beat together mashed banana, oil, eggs and water until creamy. Add flour, baking soda, baking powder and spices. Beat well. Stir in nuts. Spoon batter into oiled and floured 9 x 5 inch loaf pan. Spread batter evenly. Bake at 325 degrees for 45 minutes or until a knife inserted comes out clean. Cool completely on wire rack before slicing.

You can use all Splenda is your wishing to go lo or sugar free, as splenda is excellent for baking. Otherwise would suggest the applesauce as a substitute to cut the amount of sugar added.

They both are Just the thing for your health. If you eat both, you're better off. But yea, I had choose fruits because they taste better.

It is determined by the fruit or plant involved with a comparison. In the event that you compare a farrenheit to a carrot, the carrot is the better of the two nutritional. But once you compare an avocado to the carrot, then an avocado is better. Equally the apple and avocado, are fruits.

I have always used Apple Sauce in place of sugar.
Makes everything I bake softer and moister...My friends and family loved it..
