I like assorted cold-cuts;-} use several slices of meat.
You can have mustard or ketchup on it, safely.
What about mayo? It should be dairy free.
Try Tuna, Salmon, Egg, or chopped meat.
Mix in some chopped onion for flavour.

My favourites are -

Hummus and tomato with lettuce or sprouts
Peanut butter and jelly
Green pesto, sliced tomatoes and bocconcini (mozzarella)
Tuna melt
Artichoke hearts, sundried tomato in oil, marinated mushrooms and provolone cheese.

I use vegan cheese.

Slice whole wheat bakery bread yourself (not pre sliced-ya want it thicker).
Spread a health store real peanut butter on one side generously, top with thin sliced apple, and trickle with honey..add other slice of bread. it will be a really fat, healthy sandwich.
