American potato salad and/or sweedish meatballs,meatballs for spaghetti,chicken dumpling soup? Thanks for your help!

Here's how I make my potato salad and everyone loves it:

POTATO SALAD

Russet potatoes - however many you want for the amount of people you are serving
diced onions
hard boiled eggs - in chunks
diced pickles or use pickle relish - sweet or sour - your choice
diced celery
diced radishes
mayonnaise
mustard
pickle juice
salt and pepper to taste

Boil the potatoes with their skins on until your fork goes in and comes back out easily but don't overcook. Remove from the stove, drain and add back cold water to stop the cooking process. As soon as you can touch them, start peeling them. Then when it is cool enough for you can do the next stage, cube the potatoes into a bowl. Add the onion, celery, radishes, pickles/pickle relish and eggs. Mix together in a bowl the mayonnaise (like 1 cup), mustard (like 3 T), salt and pepper. Add the juice to thin it enough to coat everything. You may need more of the mixture so make as much as you need. Mix well. You want it a little moist because when you refrigerate it, the potatoes will absorb some moisture so you don't want them dry when you are ready to serve. Once it's all mixed, place it in your serving bowl, place a layer of sliced hard-boiled eggs over the top and sprinkle with paprika. Cover with saran and refrigerate until ready to use - can do a day ahead.

My daughter-in-law's mother makes basically the same recipe I do but she also adds Thousand Island dressing to the mayonnaise mixture and adds chopped cooked bacon to the salad. Both are very good.

This is a recipe my aunt got from her Swedish mother-in-law. It is so good that it is mandatory at all family gatherings and it keeps the relatives coming every time!! Her Swedish mother-in-law was born in Sweden and moved to the United States with her husband in the 1915 range. You can't go wrong with this recipe.

SWEDISH MEATBALLS

1 1/2 lbs round steak
1/2 lb pork steak
onion - grated to taste
salt and pepper to taste
1/4 tsp ginger
2 eggs
about 8 slices dried bread
1 1/2 c evaporated milk

Grind the beef and pork together (she grinds it 3 times but you could use ground beef and unseasoned ground pork in place of this). Put the bread in the milk and let soak until wet. Put everything together in a bowl and, with your hands, mix it together until fully incorporated. If it looks hard, add a little water. Make into balls and fry in fat (bacon fat preferably) - in today's world you could use oil but it won't taste as good. When balls are light brown, put in a casserole dish or metal pan, cover and bake on 350º for about an hour. Drain the juices and make a gravy using the juices. Pour the gravy back in the pan with the meatballs and let everyone spoon it out to go over some nice potatoes. She would cut a whole potato into 4 to 6 pieces, rolled in butter, salted and peppered and baked until golden. You could use mashed potatoes also if you wish.

These meatballs are nice and tender and can be cut with a fork.

American Potato Salad

INGREDIENTS
5 pounds red potatoes
* 6 eggs
* 2 cups mayonnaise
* 1 onion, diced
* 2 green onions, thinly sliced
* 1 small green bell pepper, seeded and diced
* 3 stalks celery, thinly sliced
* 2 teaspoons salt
* 1 teaspoon ground black pepper

DIRECTIONS

1. Bring a large pot of water to a boil. Add potatoes, and cook for 15 to 20 minutes, or until tender but still firm. Drain, cool and cut into cubes.
2. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
3. In a large bowl, combine chopped potatoes and eggs. Mix together mayonnaise, chopped onion, green onion, green pepper, and celery. Season with salt and pepper, then mix well. Cover, and refrigerate for several hours or overnight.

SWEDISH MEATBALLS

Meatballs:

2 lbs ground chuck
1 1/2 teaspoon garlic powder
1 teaspoon seasoning salt
1/2 teaspoon pepper
1/4 cup plain bread crumbs

Sauce:

1 bottle chili sauce
1 jar grape jelly

Preheat oven to 350°F. Combine garlic powder, seasoning salt, pepper and bread crumbs with ground chuck. Mix well and make into meatballs. Cook in preheated oven 30-35 mins or until done.

While meatballs are baking, combine 1 bottle of chili sauce and grape jelly in a saucepan and heat until jelly has melted.

When meatballs are done, remove from oven. Drain and transfer meatballs to saucepan and coat well with sauce before serving.
