I would lightly flour, salt and pepper it, sear it, and put it in a pot. Pour some soy sauce and coffee over and around it to about 1" in the pot. Cover and roast until you rmeat is tender. The soy sauce/coffee mixture will not only tenderize the meat but will also make a beautiful dark brown gravy.
