There are some 'new' veggies that just slip into the Sunday roast lunch, i.e. sweet potato. But, you know, I can't think of aubergine fitting in, it just isn't compatible..

Chop it into chunks and roast it with potatoes or other vegetables. You could also cut it in half, scoop out some of the inside and stuff it with garlic,herbs, butter and breadcrumbs, then roast it in the oven. I also think its really nice with ratatoille...sometimes i have that with my roast dinner. Good luck!

You could peel it, cube it, and saute it with onions and garlic. Then add some fresh chopped tomatoes and Italian seasoning and saute it until it is done but not mushy. Serve it as a side veggie.

Cut it into chunks and put salt on it that will draw out the bitterness.Wash the salt off after 1/2 hour or so pat dry and fry in olive oil.....yum.
