Depends how you are doing your sweet potatoes, I always roast them along with the roast potatoes and sometimes with roast parsnips. That is what I did today, with roast lamb, cabbage and cauliflower

I wonder how many make the traditional Sunday roast? I am glad to see it has not been thrown out..

BTW, I use goose or duck fat to roast the veggies

Well I got great ideas for the next time I cook a roast and Sweet Potatoes.....I have usually microwaved them , boiled them till soft, or oil the skin and wrap them like a baked potato and bake um. Then cut in half lengthwise, and just add butter, salt and pepper to taste. Sometimes, I make a cinnamon sauce to drizzle over them, with butter, brown sugar, a bit of water, and cinnamon, and if on hand a splash of Heavy cream. Yummy anyway you do them......

Cover them with thyme before you roast. Really adds a new dimension to the already lovely flavour of the sweet potato.

quarter them and put them in the roast along with your carrots and onion the last 1 1/2 hour of cooking time....or make them on the side like baked potatoes.

I like to keep their skin on, chop them into wedges and roast them with a mixture of other vegetables, some fresh herbs and olive oil. They go lovely and soft on the inside and have lots of flavour.

Mash them with some Maris Piper potatoes and then grate some cheese over the top and wack it on the oven until the cheese melts and bubbles. mmmmm mash!
