Sausage, Bacon & Leek Hotpot
Over medium heat, brown sausages for about 5 minutes in half the butter. Remove from pan, drain on kitchen paper, and put in an ovenproof dish. Add quartered bacon rashers and sliced onions to pan, cook for 5 minutes. Take out with draining spoon, spread over sausages. Add thickly sliced leeks to pan, cook over medium heat for a few minutes to soften. Spoon into dish, add thyme sprigs. Season. Peel potatoes, slice into rounds 0.5 cm thick. Arrange overlapping to cover leeks. Pour in stock to fill two thirds casserole dish. Dot rest of butter on top. Place dish on a baking tray. Cook in oven at 220°C, Gas Mark 7, for 45 minutes until potatoes are browned and tender.

8 Pork Favourite Recipe Sausages
25 g Butter
1 pack Wall's back bacon
1 onion
500 g leeks
sprigs of thyme
600 g potatoes
300 ml chicken stock

I make bacon hotpot by layering bacon, thinly sliced potatoes and onions. Add a couple of oxo cubes and cook in the oven for about 2 to 2 and half hours. You can thicken the hotpot with cornflour at the end if you want. Delicious

Lancashire hotpot is made with lamb, but replace the lamb with bacon and it is delicious.
