I love butternut squash, it is really easy to cook. Just put it in a pan that can go to the oven with some water on the bottom and cook it for about 20 mins. Though I am not sure about the exact time, haven't cooked any for a while.

I pierce mine with a fork and then microwave it for about 5 minutes(turning once). This makes it easier to cut. Once it softens up, I cut it and take out the seeds and peel it. Then I slice it up in about 1/2 in slices and do the same with a couple of Granny Smith apples. Arrange the apples and squash in a baking dish and top with butter, brown sugar, pancake syrup, some cinnamon and a little nutmeg(or apple pie spice). You can get creative and add raisins, nuts etc. Bake covered at 350 degrees for about 45 minute, till squash is tender. It's a wonderful side dish and even better the next day!

No, no, no, lol. This is how you do it...Cut in half (either direction, scoop out seeds. Place flesh side down in baking dish sprayed with Pam for 30 minutes at 350. Carefully turn over and lightly salt/pepper and fill centers with butter (3 or 4 TBS) and brown sugar (about 1/8 cup or so). Bake for another 30 minutes at 350. I make this all the time for years now. just use amounts of butter/brown sugar that satisfies you...doesn't have to be perfect to turn out right...you're just filling that center with the good stuff. P.S. If ya want to add a tad of water to the pan, go ahead; barely any, but you don't have to.

OOH! Cut it into quarters and scoop out the seeds, then put a pat of butter and a little brown sugar where the seeds were. Put it in the microwave for 10 minutes, more or less depending on how soft you like it. Or, if you want a more formal approach, prepare it the same way but drizzle it in olive oil and spices (I like oregano, garlic, and basil) and bake at 350 degrees for about an hour.

Cut in half, lengthwise...scoop out seeds, etc. Place cut side down in a casserole of 1/2 inch water and microwave approx 5 mins., until slightly tender. Drain water and turn over, and if you like, add butter, salt, pepper and brown sugar to halves. Return to microwave for two minutes. Serve.

If you cook it in the skin, in the nuker (microwave) or the oven: to test for done...push on the skin, or give it a squeeze, if it gives in to slight pressure it is done much like testing potatoes. Butter, syrup, brown sugar, all that is tasty, just the butter is delicious, and sometimes the squash is sweet on its own.
