Given a choice, I would peel neither one. There are excellent vitamins in the peels or skins of both vegetables. The only potato I've ever had to peel is the big Russet potato because the skin on it is very tough. Just make sure that you give them a thorough scrubbing with a soft brush before you cook them.
And if you can, steaming is better because it leaves more of the natural vitamins in that boiling in water tends to remove.

Carrots. They're easier. And g*d knows I've peeled way too many potatoes at work to never want to peel them again!

I never peel carrots or potatoes. Just scrub really well to insure you remove all the dirt. Rinse and slice or cook whole. I think leaving the sink on add an extra flavor.

Carrots.
Just hold the carrot in one hand at the top, lean bottom of carrot on chopping board at an angle and peel away from yourself while turning the carrot with your other hand.
Then swap ends.

neither, I only peel potatoes when I am making snowwhite mashed potatoes, (like for Thanksgiving Dinner) I use the dark green scrubbie (designated only for veggies) and scrub the potatoes well, and do the same for the carrots. Simple and done quick.

I usually don't peel them because the skin is edible and nutritional.
I'll peel them only if the recipe absolutely needs them to be peeled, like making mashed potatoes.
