Flounder, but watch for bones. It is very tender, flaky fish. I don't think Tilapia is really food. I don't eat farm grown fish; too much disease prone. Too bad ya can't bake a whole Flounder stuffed with crab meat stuffing. Scale the fish, cut a pocket, add stuffing, score top and dot with butter and sliced fresh lemons, bake 350 for about 1/2 hour checking for flakiness in middle. soooo good! Stuffing is just a pound of crab meat, chop onion-1/2 cup, celery 1/2 cup, bell pepper 1/4 cup, one clove minced garlic, 2 cups rice cracker crumbs, 2 TBS chop parsley, 1tsp dry mustard, 1/4 tsp salt, dash Cayenne pepper, 1 beaten egg, 1/4 cup milk, 1/2 cup melted butter, 1 tsp Worcestershire sauce...just mix that all together in a bowl and there ya go. if ya don't have a whole Flounder then maybe just put stuffing in center of fillet, roll it up, tie with string and bake that way. I've never had Haddock.

Flounder, then haddock, then tilapia. Tilapia was always one of the junk fishes but has gained notariety in the past 10 years. Preferred, by different ethnic cultures because it was cheapand versatile. I do find it flavorful. But nothing touches good flounder. Flounder is in the Halibut Family.
