The milk soaking is good, also the orange juice works too. Also,orange, papaya, pineapple juices are natural tenderizers. Spices like garlic help too. after the milk/or oj soak, just before cooking. Here is a tip for anyone using a tougher cut of meat and wanting it more tender. Lay the meat on a cutting board and with a regular dinner fork pierce the meat all over many times, one side will do. This breaks down the muscle and tenderizes it. Then marinate, or soak.

If you have a meat grinder then grind 2/3 venison with 1/3 fat with an equal amount of cheap hamburger. Use this for patties, meat loaf, meatballs, etc. Venison has no fat, you must add it.
For a roast, marinade it in a bag with your favorite marinade. I have used Italian dressing. It tenderizes too.
You can BBQ, but it might be tough.
An awful lot depends on the age of the deer. The older the tougher and stronger the odor.

I have eaten lots of deer and everyone claims to be an expert, the only way I actually like any deer is if it is finger steak-ed. Deer is deer, it's impossible to get rid of the gamey flavor. The smell will go away once you cook it. With deer I have found that lots of flour and hot grease is the best answer. Cook that baby, hot and well done.. Good Luck

musk glands that will rupture and spread the scent
to the meat.

Wow!!!!! I love the way deer meat smells. That is one of the pleasures of having fresh meat. Can't wait for deer season in November.

My dad was a chef and used the milk marinade for game. Also orange juice. Seems wasetfull but worked. You could also use a mild brine for 24 hr. changeing the brine three or for times.

Try marinating the meat in Milk... that works to detoxify meats like shark... of course... you throw away the milk when you are done using it.

Go to a market and buy venison. It saves time, and you don't have to worry about getting shot by your fellow hunters.
