Other than hiking, I highly recommend you to visit the Hong Kong Wetland Park in Tin Shui Wai or the Hong Kong Museum of Coastal Defence in Saukeiwan (it was a battle site of WW2)

well, as for me, you can do a lot of things in Hong Kong but i think one is for sure you will become more nature friendly cause when you went there you will notice how they take good care of their environment and natural resources...
if you doens't know anyone there to guide you, go find a tourist guide or ask a hotel receptionist for it/about it, but if you want adventure just get a map(hotels have it) and tour alone... it's fun though you really have to be careful and alert...
hong kong is well known for shopping, whether in night market, malls, factory outlet or in high class stores... have to see their landmarks - the peak, hk park, temples, cable car, avenue of the stars, wetland park, ocean park (never mind disneyland if you've been to disney USA, florida or california, coz iHK disney is much smaller)... you have to try to ride to tram, gondola, cable car... you have alot of things to do in hk you just have to be adventurous, asks locals there as well as other tourists and most important thing, you must be ready for long walks... foods are expensive in hk but still depends where you will eat but mostly it 's worth it...
bring comfy clothes, don't forget umbrella or cap, sweatshirt/light sweater, walking shoes... it will help...
try to go to aberdeen, hong kong island and kowloon side - you will see a lot of things there...also try pink dolphin sightseeing and don't forget the well known symphony of lights...

shopping and sight seeing. if it's ur first time there, have some tourist guide for you to enjoy and visits the attractions there. bring a lot money cuz the stuff there is very expensive.

go to macau admire the architecture, go to shenzen to see the wonders and shopping... if in HK, if it is your first time, you need to go to Ocean Park, visit the Disney, Mongkok, there is a Snoopy town, etc. why not take a boat cruise around the area
