Don't listen to these other non combatants. If you want a real good " famous western " taste the try ...Lawry's Seasonings.
You can find them at any major food store. Trust me. You will love that " western taste."

Depends I usually bread them with bread crumbs or flour your choice salt pepper to taste and a little seasoning salt.
experiment with spices. In a frying pan add 1/2 inch oil (preheat) after coating wetted potatoe wedges with crumbs and spices mixed togeather or flour with spices brown the wedges and finish in the oven in a pan with a drip rack at 350 degrees till done can add a smidgeon of cayanne too for a little fire or not much. great to dip in sour cream

For a western style, mix together:
1 T. onion soup mix
1 T. chili powder
1/4 t. salt
1/4 t. garlic powder
1/4 t. pepper

Then sprinkle it over your potato wedges.

I generally use a little soul food seasoning or cajun seasoning to kick them up a bit....

The dollar store near me sells "French Fry Seasoning" I think it's mostly msg and salt.

try old bay [it is for crabs] but gives a good kick on french fries or baked potatos
