I guess some folks don't read the questions. You asked about seasonings as well. Rice flour will make a crispy batter as will cornstarch added to regular flour.
For fish I like Cajun or Creole seasoning like Tony Cachere. Don't have it just use black pepper and a little red pepper like Cheyenne. Chicken I use either commercial poultry seasoning or sage and thyme.
Using egg white in the batter actually makes it less crispy. Just water is best,cold water as stated. Or beer.

use rice flour with some egg whites and then add just enough ice cubes to make it a cream-like consistency (not too watery). make sure the batter is cold when you fry.

the sudden change in temperature from icy cold batter to boiling hot oil will add an extra level of crispiness to your fried food

Are=Or??

You can use it, just put whatever "crunch" you want with it such as crushed cereal or whatever and the seasonings you prefer
