Not sure on how, but the two links below can tell you how and why. As to if its good for you.....like you would find that under food listings. From what I've been told what you should avoid alot of is the type of powdered cheese like in the Mac and Cheeses from the boxes (any but true homemade) Cheez Whiz etc, can't remember why though, but there's really nothing good left in them.

I love cheese and eat it in moderation. I know it's high in fats and sodium. That's regular cheese.
Processed is a manufactured product containing cheap oils, fillers, artificial flavors and colors, stabilizers and a lot of salt.
No, processed cheese is not good for you!
