I want to make my christmas cake this year and my husband reckons I cant do it I need to prove him wrong Please anyone can you help me.

Christmas cake - It looks difficult with many ingredients, but you will be overwhelmed with the result and the WOW! factor is something else!

8 oz Plain flour
8 oz Demerara sugar
8 oz Raisins
8 oz Sultanas
8 oz Currents
6 oz Chopped Dates
8 oz mixed fruit
4 oz candied peel
8 oz Unsalted butter
4 oz mixed nuts finely chopped
6 medium eggs
Zest & Juice of 1 Orange
Zest & Juice of 1 Lemon
1 tsp all-spice powder
1 tsp nutmeg powder
1 tsp cinnamon powder
½ tsp ginger powder or candied ginger
2 tbsp black treacle
1 grated apple
1 grated carrot
Rum, Brandy or Scotch to soaking the fruit if so desired. The fruit should be soaked for a minimum of one to two weeks and turned daily.

Cream butter & eggs
Sift flour and dry ingredients together
Fold the dry ingredients into the butter and egg mixture
Roll the fruits & nuts in plain flour and then mix into the above mixture, to dropping consistency
Grease an 8” tin, line with baking parchment and grease again
Put mixture into the tin, level and make an indentation in the centre
Bake in the centre of the oven at low heat till cooked
When cooked, and still warm, pour two tablespoons of sherry or brandy over the cake and allow cooling completely, leaving the cake to rest for a while
When completely cool, wrap in baking parchment and store in a tin till ready to serve

Ingredients
12oz Plain flour
1 Teaspoon mixed spice
4oz Ground almonds
8oz Currants
8oz Sultanas
8oz Raisins (stoned)
4oz Cherries (halved)
8oz Butter
8oz Soft brown sugar
6 Eggs, beaten with 8 tablespoons of milk
1 Tablespoon black treacle

Method
1. Mix flour, spice and ground almonds together.

2. Clean and mix fruit.

3. Beat butter and sugar to a cream.

4. Beat the eggs and milk together.

5. Mix all these ingredients together.

6. Add the fruit last. Bake for about 4 hrs.

First hour in a moderate oven 180°C (Gasmark 4), then slow oven at 150°C (Gasmark 2).

Any of the recipes you have been given above are fine, BUT:

If they do contain ground almonds, I would substitute some of the flour (up to about 25%) with them. You can use chopped almonds in addition if you like
Use black Barbados or molasses sugar and not Demerara

These two keep the cake moist

Also make well in advance, ie now. Keep wrapped in foil and every week prick holes in it and feed it with brandy or rum.

Can't suggest anything about icing as no-one likes it at home. I just cover it in white marzipan and put some marzipan fruits and whole almonds on the top and sides to add colour

Preparation time 30 mins to 1 hour

Cooking time over 2 hours







Ingredients
225g/8oz plain flour
1/4 tsp salt
1/2 tsp mixed spice
1/2 tsp ground cinnamon
200g/7oz butter
200g/7oz dark brown sugar
2 tbsp black treacle
1 tbsp marmalade
1/4tsp vanilla essence
4 eggs, lightly beaten
800g/1 3/4 lb mixed dried fruits
100g/3 1/2 oz chopped mixed peel
150g/5oz glace cherries, halved
100g/3 1/2 oz blanched almonds, chopped
brandy

To Decorate the Cake:
200g/7oz marzipan
1-2 tbsp apricot jam, warmed
Royal Icing
3 egg whites
600g/1lb 5oz icing sugar, sieved
11/2tsp liquid glycerine - optional
1 tbsp lemon juice



Method
1. Heat the oven to 150C/300F/Gas2. Grease a 20cm/8inch round or an 18cm/7inch square cake tin and line the bottom and sides with baking parchment.
2. Sieve the flour, salt, mixed spice and cinnamon into a bowl.
3. Cream the butter and the sugar in a large mixing bowl and then mix in the sugar, treacle, marmalade and vanilla essence until light and fluffy.
4. Mix the eggs a little at a time into the mixture adding a tablespoon of flour mixture with the last amount.
5. Fold in the remaining flour mixture until well mixed and then mix in the dried fruit, mixed peel, glace cherries and the almonds.
6. Turn the mixture into the prepared tin and make a slight hollow in the centre.
7. Bake in the oven for 3 hours and then test with a skewer. If not ready bake for up to another hour testing every 20 minutes until the skewer comes out clean.
8. Remove from the oven and leave to cool in the tin for 15 minutes.
9. Turn out on to a wire rack and leave to cool.
10. Once cool, make a few holes in the cake with a skewer and pour over 3-4 tbspof brandy. Let the brandy soak into the cake.
11. Store the cake wrapped in foil and in an airtight tin or plastic container, holes side up.
12. OPTIONAL: For a rich and moist cake, spoon over a few tablespoons of brandy every week until you are ready to ice and decorate your cake.

To Decorate the Cake:
1. Place the cake on a foil board or cake plate.
2. Dust your hands and the work surface with a little icing sugar and knead the marzipan until soft.
3. Roll out half the marzipan to fit the top of the cake and roll out the rest in strips to fit around the sides of the cake.
4. Brush the cake all over with the warmed apricot jam and then place the marzipan on top and around the cake.
5. Cover the cake with a clean tea towel and then leave in a cool place for at least one day.
6. To make the icing, lightly whisk the egg whites adding the sugar at intervals. Beat well until the icing reaches soft peaks. Add the glycerine if using and the lemon juice.
7. Spread icing all over cake either flat iced using a clean ruler or by forming soft peaks. Decorate with Christmas ornaments

My local food weigh-house (the ones with the big buckets of flour etc and you scoop the amount you want into a plastic bag) sells a ready measured out christmas cake pack, it has the right amount of every ingredient you need bagged seperately, and it comes with a simple recipe to follow. Best thing is they only cost a few pound

This way you're still making it from scratch but you're only buying the ingredients you need saving money and waste.
Saves you ahving to buy a bag of something you only need a pinch of

Salmon mousse: 1 pack of fresh salmon 1 Lemon Soft cheese (as much or as little as required) Pinch of cracked black pepper Fresh dill Mash up the salmon add the cheese and mix it up well (hand blender would be good to give it a fluffy feel) squeeze the lemon juice in, mind the pips! throw in some chopped dill and the pepper. Whisk it all up again. Put the mousse into a bowl or bowls and cover and chill. Mince meet swirls: Ready rolled puff pastry Jar of mice meet meet (you can make your own if you want to) Icing sugar Parchment paper Cut the puff pastry into long enough strips and lay mince meet on top of the strips. Then carefully roll the pastry and mince meet into a swirl. Place in the oven (pre heated oven) and cook for about 15 mins. Depending on if you have gas, fan assisted or electric. Just keep your eye on them! When cooked cool and add the icing sugar to a little water so that it is quite thick. Drizzle over the mixture in lines and you have mince meet swirls :) Trifle with a twist: A large bowl with a stand Custard powder Sugar Sponge fingers Jam Milk Cream Strawberries Raspberries Vanilla sugar or pods Mix up the custard powder so it is quite creamy with the milk, sugar and cream. Pour out into the the bowl and leave to cool. Spread jam onto the sponge fingers and place them into the cooled custard. Then add the strawberries and raspberries over the top of the sponge fingers and custard. Whisk the reaming cream and add the vanilla. If you are using pods scrapeds out the seeds from inside and put them into the cream. Keep whisking until soft peaks form. Put the cream on top of the mixture in the bowl add some caramel vermicelli and chill until served.

Start now for next year,
I soak all my dried fruit from one year to the next in a tub, first add a cheap bottle of brandy, then go on from there, keep adding whatever is left in any bottle you have, even the smallest drip, bung it in.........
you can also add, dried ginger cubes, cherries, nuts, anything at all, my wedding cake was made this way also,
it never goes dry, the fruit is boozy, and its wonderful with champagne or brandy.

Method
1.Get in the car
2.Drive to tesco
3.Go to the cakes
4.Pick up a Christmas that looks homemade
5.Remove all packing
6.place in baking tray
7.Heat in microwave
Show it to husband as you cut stem will come out husband thinks you made it !

Why not make a Christmas Pudding instead - it's even easier. Make enough for two years, it keeps very well, and tastes even better in year two.
