Hi Santa, Not too long to go now eh!
You want to roast the potatoes with the lamb joint. You don't need much oil if any as lamb is a fatty meat and will provide easily enough.
1, Putthe joint in the oven
2, Whilst it is roasting, peel and cut the potatoes into quarters.
3, Place the potatoes in the roasting tray around the meat.
4, Baste, and leave to roast together for a further 45 mins
5, Spear the Potatoes to see if they are done.
6, Mint Sauce is the most appropriate accompniament so make sure you have some to hand.
7, You need some vegetables as well. My rule is one green veg, and one other. (Carrots or Parsnips)
8, Cook these on the cooker whilst the potatoes and the meat are roasting together.
9, In the water used for cooking the vegetables, make up some gravy, and Bob's your uncle.
10, A nice red wine, Bordeaux or a Bourgogne is a perfect accompniament.

You asked for basic so I'll keep it simple for you.
Go to the shop and buy 2 other veges, and a ready made gravy.
Preheat your oven to 180C/375F. Cook the lamb and chopped potatoes in a baking dish with about 1/4 cup oil for about 60 minutes. Turn the spuds every 20 minutes or so.
Chop the other veges and microwave till cooked, ready for reheating at serving time.
Remove the lamb when it's cooked to your liking (use a thin knife to skewer the lamb to see if the juices are clearish). Wrap in foil and let sit for 10 mins before carving.
If the potatoes aren't ready, wrap the sliced lamb in foil and keep warm on top of the oven.
This is not the ideal method but it's the simplest method which is what you asked for.

Citrus roast lamb
Serves 4-6
Preparation time less than 30 mins
Cooking time 1 to 2 hours
Ingredients
1.25kg/2½lb lean lamb leg joint
1 orange, zest and juice
2 cloves garlic, sliced
2 sprigs fresh rosemary, leaves removed from stalk, plus 1 tbsp, chopped for the gravy
1 tbsp oil
3 tbsp orange marmalade
2 tbsp gravy granules
150ml/¼ pint water
Method
1. Preheat the oven to 180C/350F/Gas 5.
2. Take the lean lamb leg joint and make several slits into the joint. Mix together the orange zest, garlic and rosemary with the oil.
3. Stuff this mixture into the slits. Place onto a rack on a roasting sheet and open roast in the oven for 1½-1¾ hours.
4. 10-15 minutes before the end of cooking time, glaze the joint with 2 tbsp orange marmalade.
5. To make the gravy, mix together the water with the juice of the orange and the juices from the pan (drain off any fat first). Add 1 tbsp orange marmalade, 1 tbsp fresh rosemary and the gravy granules. Bring to the boil and heat until thickened.
6. Serve the lamb with roast or mashed potato and roasted or steamed seasonal vegetables.

Ok. It is all dependant on the amount of time you have but here is a simple idea.
In a large hot pan, sear the meat for a few minutes to brown it. If the joint is lean, and to keep the meat moist, you may want to rub a little olive oil over it first.
Once browned, transfer the meat to a roasting pan. Add a little more olive oil and if you have some, insert fresh rosemary (moistened with oil so it doesn't burn) into little slits you have cut into the flesh and fat of the joint.
Roast on the middle shelf in a medium oven - about 190 degrees celsius - for about 30 minutes per 500g of meat. Less if you like it pink.
For the potatoes - I wouldn't roast as the oven won't be hot enough. Instead I would peel and boil for about 20 minutes, drain and add butter, parsley, mint and chives.

Really simple- Crush a clove of garlic and mince some parsley, add 1-2 tsp lemon zest and cover the lamb with the mixture- let sit for 30min's -1 hour. Heat 2 Tbs butter & 2 Tbs olive oil in a large skillet- add lamb and sear about 5 mins, then turn over lower heat and simmer until the right temp.
Dice potatoes, add to boiling water and cook until tender. Drain, add salt and mash potatoes. Add butter and cream, and mix until combined,

Nick the lamb all over and insert sprigs of rosemary. Crumble an OXO cube over the lamb. Pour on a can of strong dry cider. Cover with foil and put in the oven for the time stated on the wrapper. All you have to do now is wait for it to cook, remove the foil and you have the gravy as well. Do I really have to tell you how to do roast potatoes?

Good for you, if you don't cook for her very often she will appreciate that, keep it simple then you wont get into a panic:
Roast your lamb medium to hot oven.
Mash potatoes.
Roastiz always go down a treat.
If you have any fresh carrots cut up and boil for 5-6 mins.
Parsnips peel and put in the roasting pan with the lamb.
If you have no fresh veg hopefully a tin of peas is a nice standby.- A bottle of wine works wonders too!
11 out of 10 for doing it yourself and you get my star.ENJOY.x

ok.. so the lamb goes in the oven if you have any tyme 'herb' put some on the lamb to flavour it.. but just a little..
potatoes peel and put in pan of water.. once they have started to boil reduce heat and let them simmer.. dont forget to add a little salt.. before you spuds are cooked say 15/20 mins put them in with the lamb and coat with the lamb juice.. this will give you some lovely roasters...
dont forget stuffing... you can buy prepacked stuffing.. instructions on pack....
i have yorkshire with my dinner no matter what it is..some only have with beef but its up to you.. quick buys are ready made ones.. they take about 3 mins in oven..
gravy, mint sauce..
fresh veg.. carrots, sweede.. mashed together once cooked with a little butter.. brocoli, maybe a few sprouts if you like..
its quite easy just getting the timing right is a little tricky for the first go..
PS: DONT LEAVE THE WASHING UP TO HER.... DISHWASHER OR DO IT YOURSELF.. THAT WILL SPOIL THE WHOLE DINNER IF YOU LEAVE IT!

Some veg, gravy, all that.
lamb should say how long to cook for (depending on size)
try roasties. (depending on your oven)
half boil, then place around the lamb, sprinkle VERY lightly with plain flour first, to get crispy.
