there are lots of different versions to imagine,
always depends on the one counting,
anyway, after noon afternoon begins,
and evening could earliest be after high tea
by 5:00 p.m. and before 11:59 p.m.
since that would be midnight.
somewhere in between you will
find your evening beginning.

When answering phones I used to say good morning until 12 then good afternoon until 6pm then good evening after that.

Good question. Personally, the evening begins when the workday has ended. 5-6 p.m.

Officially, it's when the sun sets, or when it's dinner time.

I would say evening begins about 5pm, when people generally finish work.

Usually 5PM. It's getting to be the dinner hour and when some of us start winding down from a busy day.
