Is there a limit?

Do the camera's have to be rated to go under 100+ ft, or does the housing take care of that?

If the camera needs to be rated, is there a list somewhere of cameras that can go down 100+ ft?

just like a watch, the pressure could be too much for the camera. the housing would have it's own pressure rating, but it wouldn't change that of the camera.

i would personally contact the camera manufacturer and ask this same question to make sure you don't void your warranty.

You need a specific housing for the specific camera you are using. There is no universal underwater housing - you need to be able to operate the camera from the exterior of the housing and all the controls need to 'mesh'. The housing details will give the depth to which it is rated.

There are some universal housings, but I rather recommend the genuine (camera manufacturer) ones.
If the camera and the housing are from same manufacturer, you just have to take care of the housing's rating.

If you're going that deep, I don't think you'll find a cheap, over the counter solution. Realisticly, I think you'll have to settle for taking picture out the portal of a submarine.
