I think most have missed the basis for your question which is when it became leisure and/or sport.
Looking back into the far past the first to hunt as a past time were the ancient Egyptian hierarchy. It is in pic-to paintings on tombs of Pharaohs and others of high rank. This was only possible for them due to the large numbers of slaves and lower citizens who were far too busy going about the necessities of life and providing those needed items to those above them in societal rank. Later during the Renaissance it was considered the sport of Kings, once again because many were working to support the few. Even in this country it was not considered a "sport" until the economy was established and settled to the point where the average Joe could go to the corner store to pick up the meat for the table. This evolution came about in the early 1800's but much later in the western states as they were still being settled.
The change from necessity to sport comes with the progress of the general population to sustain itself without hunting. Once money buys the meat for the table the hunt becomes a sport because it isn't required.
I and my family hunt for leisure but also to place the meat on the table and save our hard earned money. With the deer that we harvest every year we have figured, by processing the meat ourselves, that we save several hundred dollars a year. This makes our lives easier obviously, so as to create a leisure and a necessity of it.

Hunting became popular when the first cave man cooked his first road kill and decided it would be better if killed and cooked while it was still fresh.
It became a popular leisure time activity in the early 20th century after all the meat you can eat can be bought in a store and men had to work continually to pay bills.

That would have happened at different times in different areas. The determining factor would have been the availability of meat in stores and the ability of the populace to buy the meat. Refrigeration had a lot to do with when meat became available in markets. Of course, if a family didn't have the mooney to buy meat, they would still be dependent on farming and hunting to supply their meat. Once meat became readily available in stores, families were no longer dependent on hunting to supply it. For that family, hunting would then move more into the recreation category. Many factors determine when this would happen in any given area and to any given family within that area. It is not a matter of one day people all over the U.S. woke up and found that now hunting was done just for recreation.

About 2 million years ago when human beings came along and like every other species of animal realized that if they didn't eat, they wouldn't survive. Although at this point in time it is not a necessity to survive because things are cozy and fast food joints, ipods, starbucks lattes, internet, are all nice conveniences for most to enjoy, some still hunt as a means of survival. You never know when you can be stripped of all of civilization's comforts and be thrown back to the basics of survival such as learning how to live off the land, including hunting.

Missy, hunting has been popular since forever. Man is a hunter/gatherer, that is just how it is.
Since Man now has more leisure time he does more of what is natural because he can.

id say about the time that a caveman realized that he and his family were tired of sticks and berries and realized that if he took his club out and wacked animals with it he would have something a little bettter to eat. then as far as leasure goes he realized it was relaxing to go hunting and get away from the nagging women back at the cave

Hunting & Hunters is not really that popular because the people who do it in the U.S.A. only account for 15% of the total population of the United States, which means that 85% of those eligible to hunt do not hunt.***
